Café Joyeux Chef de Cuisine Job Description

Job Summary:

The Chef de Cuisine at Café Joyeux is responsible for coordinating, directing, and supervising all kitchen activities. This role requires a strong culinary background, excellent leadership skills, and the ability to maintain high-quality cuisine while adhering to budgetary constraints, hygiene, and safety standards.

Key Responsibilities:
  • Culinary Production:
    • Participate in the execution of culinary production in accordance with Café Joyeux's requirements.
    • Prepare dishes in accordance with recipe sheets provided by Café Joyeux.
    • Ensure the preparation and elaboration of dishes while adhering to preestablished recipes with the kitchen team.
    • Organize production in anticipation of services and according to café hours.
    • Follow forecast for the week shared by the General Manager.
    • Check the taste and visual appeal of all preparations and adjust seasonings.
    • Ensure timely preparation of culinary preparations during service.
    • Ensure that the display is always attractive to encourage impulse purchases by guests.
  • Stock Management:
    • Perform daily ordering and stocks management in accordance with Café Joyeux's standards.
    • Carry out the supply and management of stocks in compliance with the standards set by the weekly forecast and the pars system.
    • In collaboration with the General Manager, perform weekly sales analyses of the menu dishes to make the most optimal orders for the relevant products.
    • Ensure the forecasting of supplies based on the production made and distributed, strictly respecting the Café Joyeux identity and the seasons.
  • Team Management and Development:
    • Manage, lead, and develop the skills of the Kitchen Team members and Joyful Crew members.
    • Participate in hiring interviews and advise HR and the Manager on the technical and job-specific aspects of candidates.
    • Support the onboarding and integration of new employees.
    • Adapt training actions to the needs of each member of the Kitchen Team.
    • Implement "to-do lists," retro schedules, and hold debriefs at the end of each service with the Kitchen Team for daily improvement.

Requirements:

The ideal candidate will have a strong culinary background, excellent leadership skills, and the ability to maintain high-quality cuisine while adhering to budgetary constraints, hygiene, and safety standards.

Working Conditions:

The position is based at the Café but may occasionally require involvement in other offsite places as needed for catering, special events, etc.
