Kitchen Manager Job Description

Job Summary:

The Kitchen Manager is responsible for overseeing all kitchen functions, including food purchasing, preparation, and maintenance of quality standards. This role requires strong leadership and communication skills to ensure seamless operations and exceptional guest experiences.

Key Responsibilities:

  • Ensure consistent preparation and serving of food according to recipes, portioning, cooking, and serving standards.
  • Evaluate and discipline kitchen personnel as necessary.
  • Provide orientation and training to new kitchen employees.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Prepare required paperwork, including forms, reports, and schedules.
  • Ensure equipment is kept clean and in excellent working condition.
  • Work with Director of Operations to plan and price menu items.
  • Establish portion sizes and prepare standard recipes for new menu items.
  • Ensure products are ordered according to specifications and received in correct unit count and condition.
  • Control food cost and usage by following proper requisition procedures.
  • Oversee employee performance appraisals and ensure timely completion.
  • Schedule labor as required by anticipated business activity.
  • Administer prompt, fair, and consistent corrective action for policy violations.
  • Train kitchen personnel in safe operation of equipment and utensils.
  • Maintain cleaning schedules for kitchen floors, mats, walls, hoods, and food storage areas.
  • Check and maintain proper food holding and refrigeration temperature control points.
  • Provide safety training in first aid, CPR, lifting, and carrying objects, and handling hazardous materials.

Requirements:

  • A minimum of 5 years of experience in varied kitchen positions, including food preparation, line cook, fry cook, and expediter.
  • Ability to communicate clearly with managers, kitchen and dining room personnel, and guests.
  • Ability to reach, bend, stoop, and frequently lift up to 50 pounds.
  • Ability to work in a standing position for long periods of time (up to 9 hours).
