Job Summary:

We are seeking a highly skilled and experienced Chef De Cuisine to lead our kitchen team at Le Meridien Sheraton Charlotte, managed by StepStone Hospitality. As a key member of our culinary team, you will be responsible for overseeing all cooking operations, managing kitchen staff, and ensuring exceptional guest satisfaction.

Key Responsibilities:

  • Manage and Schedule Kitchen Staff: Ensure proper staffing levels and adherence to labor standards to maintain a high level of productivity and efficiency.
  • Oversee Cooking Operations: Ensure quality, portioning, and presentation of all dishes to meet our high culinary standards.
  • Assist in Meal Planning and Menu Development: Collaborate with our culinary team to create innovative and delicious menus that meet the tastes and preferences of our guests.
  • Manage Inventory and Requisitions: Ensure accurate inventory control and requisitioning of food and equipment to meet the needs of our kitchen operations.
  • Uphold Health, Sanitation, and Safety Standards: Maintain a clean and safe kitchen environment that meets all health and safety regulations.
  • Maximize Profitability: Work closely with our financial team to ensure that our kitchen operations are profitable and efficient.
  • Develop Operational and Financial Plans: Create short- and long-term plans to drive business growth and profitability.
  • Manage Inventory Control: Ensure accurate inventory control and compliance with all regulations.
  • Hire, Train, and Develop Kitchen Staff: Recruit, train, and develop a high-performing kitchen team that meets our culinary standards.
  • Implement Policies and Procedures: Develop and implement policies and procedures to ensure team adherence and flexibility.
  • Lead Team Meetings: Conduct regular team meetings to address safety and policy updates, and to motivate and engage our kitchen team.
  • Develop Quarterly Menus: Create innovative and delicious menus that meet the tastes and preferences of our guests.

Requirements:

  • Strong Leadership Skills: Proven experience in culinary management and leadership.
  • Expertise in Guest Satisfaction: Ability to maintain a high level of guest satisfaction and loyalty.
  • Financial Management: Ability to manage financial goals and deliver top-notch culinary experiences.
  • Inventory and Budget Management: Familiarity with office and accounting software for inventory and budget management.
  • Flexibility: Ability to work flexible schedules to meet business demands.

Additional Requirements:

  • Availability: Ability to work any day and time.
  • Multi-Outlet Experience: Experience working in multiple outlets or restaurants.
  • Hotel Experience: Experience working in a hotel or hospitality environment.

Language Skills:

  • English Language: Comprehensive knowledge of the English language to effectively communicate with guests, associates, and vendors.
  • Bilingual: Bilingual skills are preferred.

Physical Demands:

  • Lifting: Ability to lift a minimum of 50 pounds.
  • Pushing, Bending, Stooping, Upward Reaching: Ability to perform physical tasks such as pushing, bending, stooping, and upward reaching.
  • Manual Dexterity: Ability to perform manual tasks such as typing and writing.
  • Hearing, Writing, Typing: Ability to hear, write, and type accurately.
  • Pulling: Ability to pull a minimum of 50 pounds.
