Job Title: Sous Chef

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at Prairie Flower Casino. As a key member of our kitchen staff, you will be responsible for leading the culinary line in preparing meals to meet the high standards of our guests.

Key Responsibilities:
  • Ensure all orders are prepared to established standards and recipes.
  • Assist the Head Chef with menu planning and suggestions for improving service quality and efficiency.
  • Properly measure ingredients and follow all recipes and food portion requirements.
  • Use kitchen equipment safely and efficiently to prepare high-quality dishes.
  • Monitor temperature requirements and ensure proper storage and handling of food.
  • Assist in maintaining high-quality products and controlling costs.
  • Approve and ensure all dishes are polished and presentable to every guest.
  • Lead the culinary team to meet daily service standards and maintain a high level of guest service.
  • Ensure the kitchen is prepared for opening and closing, and that all side work is completed in a timely manner.
  • Maintain confidentiality and professionalism at all times.
  • Respond to customer inquiries and resolve complaints in a timely and positive manner.
  • Ensure work areas are clean and organized according to food safety standards.
  • Train new team members and mentor other cooks to grow and develop new skills.
  • Perform all duties in a positive and professional manner, maintaining a clean and professional appearance.
  • Regular attendance and flexibility to work varied shifts, including nights, weekends, and holidays.
  • Ensure all safety standards are met, and possible safety hazards are quickly resolved.
Requirements:
  • 4 years' experience in a busy fast-paced kitchen, with leadership experience preferred.
  • Culinary degree or related educational degree preferred, with ACF American Culinary Federation Certificate helpful.
  • Strong knowledge of kitchen equipment, ingredients, and procedures, with a focus on food safety and sanitation.
  • Excellent interpersonal and communication skills to create a positive guest experience.
  • Proficient in computer programs and software used for administrative functions, including Microsoft Office Suite.
  • Ability to work safely and efficiently in a fast-paced environment, with attention to detail and ability to multitask.
  • Ability to read recipes, follow instructions, and interpret as needed to create high-quality dishes with minimal waste.
  • Ability to maintain the appropriate Gaming License and obtain/maintain food safety training certificate.
Physical, Mental, and Environmental Demands:
  • Regularly required to stand and walk for an entire daily shift.
  • Regularly required to lift and carry up to 50 pounds and push/pull up to 100 pounds.
  • Uses hands to grasp, handle, or feel objects, tools, or controls, with dexterity to hold and maneuver boxes and supplies.
  • Consistently required to reach with hands and arms, and balance.
  • Specific vision abilities required include close vision, distance vision, peripheral vision, depth perception, and ability to adjust focus.
  • The noise level in the work environment is usually loud in a kitchen environment.
  • This casino has an enclosed gaming area where smoking is allowed, and team members may be exposed to a smoking environment.
