Overview:We are seeking a talented and experienced Assistant Culinary Leader to join our Constellation team. In this role, you will have the chance to share your culinary expertise while overseeing and engaging in the preparation, seasoning, and cooking of a variety of dishes including salads, soups, seafood, meats, vegetables, desserts, and more. This position is situated in a prestigious venue that hosts both a Michelin Star restaurant and sophisticated catered events.
Compensation: $60,000
Key Responsibilities:- Design menus that align with consumer preferences, nutritional requirements, and budgetary guidelines; engage in menu planning activities including purchasing specifications, product testing, and recipe development.
- Ensure adherence to production, safety, and sanitation standards.
- Lead and partake in the daily preparation of both standard and gourmet food items.
- Assess the quality of raw ingredients and guarantee the excellence of the final dishes.
- Conduct inspections of designated areas to evaluate food preparation quality, presentation, and cleanliness.
- Oversee culinary production for special events and catered functions.
- Supervise and assist in the presentation of menu items for unique occasions.
- Maintain accurate inventory controls for food, supplies, and equipment. Recruit, train, and evaluate kitchen staff.
- Manage revenue and expenses to meet financial objectives.
- Deliver exceptional customer service.
- Perform additional duties as assigned.
Essential:
- Experience in culinary roles must encompass a la carte dining (mid-fine dining), upscale hotels, and/or catering with a focus on large-scale production.
- 3-5 years of experience in culinary management is required.
- Strong leadership abilities along with excellent verbal and written communication skills.
- A proven history of effectively managing costs and overseeing annual budgets.
Preferred:
- A degree in institutional management, nutrition, dietetics, or hotel and restaurant management, or certification from a recognized culinary institution, or a combination of education and experience.
