Job Summary:
21c Museum Hotels is seeking a highly skilled and experienced Sous Chef to join our culinary team. As a key member of our kitchen staff, the Sous Chef will be responsible for leading a team of line cooks and stewards to deliver exceptional dining experiences to our guests.
Key Responsibilities:
- Owns service period and crew, ensuring seamless execution of menu items and exceptional guest service.
- Able to multitask and prioritize tasks effectively, with eyes on all kitchen activity.
- Knows strengths and weaknesses of line staff under supervision, delegates tasks accordingly, and sets clear expectations for the finished product.
- Available to assist line staff with recipe techniques and station prep, and to answer any questions they may have.
- Able to adapt to changing menu items and service periods, and to communicate effectively with the Chef de Cuisine and Executive Chef.
- Maintains clean and organized walk-ins and dry storage areas, and coordinates with the stewarding department to ensure efficient service.
- Orders daily and weekly product in conjunction with the Chef de Cuisine, and stays aware of food and labor costs to control expenses.
- Collaborates with the Chef de Cuisine and Executive Chef on menu development and engineering, and demonstrates enthusiasm for all things 21c.
Requirements:
- Minimum of two years' experience in a fine dining restaurant environment.
- Understanding of professional cooking and knife handling skills.
- Knowledge of safety, sanitation, and food handling processes.
- Able to work flexible hours, including nights and weekends.
- Responsible, dependable, and punctual.
- Excellent communication skills, with the ability to speak, read, and understand English.
- Clean and professional appearance.
- Demonstrates enthusiasm for all things 21c.
- Must pass a background check.
Travel Requirements: As needed.
