Job Overview

The Culinary Specialist is tasked with the preparation of food in alignment with established recipes while ensuring compliance with safe food handling protocols. The focus is on achieving the department's goals of Consistency, Quality, and a Sense of Urgency.

Qualifications

Applicants must be at least 16 years old. A high school diploma or equivalent is required, with some culinary training being advantageous. A solid understanding of safe food preparation methods, kitchen equipment, food products, and standard recipes is essential. Candidates should possess the ability to read, analyze, and interpret technical documents, government regulations, and business correspondence. Attention to detail and accuracy is crucial, along with the ability to maintain confidentiality.

Responsibilities

The following duties are general illustrations of the work involved in this role:

  • Arrive punctually for pre-shift meetings with a positive demeanor and actively engage.
  • Adhere to departmental standards and guidelines, including compliance with all Food Service and Sanitation, OSHA, and Hazcom regulations.
  • Practice frequent handwashing.
  • Complete a Food Service Sanitation course and rigorously implement safe food handling practices.
  • Maintain cleanliness by cleaning as you go and addressing spills immediately, while practicing safe knife handling.
  • Follow daily checklists for your position and adhere to kitchen setup plans.
  • Strictly follow standardized recipes to maintain food quality and ensure consistency in food delivery.
  • Utilize a digital thermometer to verify food temperatures.
  • Label and date all food items not stored in their original containers.
  • Implement the 5S Principles: Sort, Set in Order, Shine, Standardize, and Sustain.
  • Update the Daily Management Systems board with the daily lineup, order guides, prep lists, and inventories.
  • Conduct oneself in a gracious and professional manner that reflects positively on the company and its core values.
  • Perform additional duties as assigned by department or company management.
Working Conditions

Candidates must possess the ability to:

  • Accurately perform calculations and apply mathematical functions relevant to business needs.
  • Interpret and follow a variety of instructions presented in written, oral, diagram, or schedule form.
  • Resolve conflicts and problems tactfully.
  • Be flexible to work various shifts, including holidays, nights, weekends, and overtime as required by business needs.
  • Wear plastic or latex gloves when handling ready-to-eat foods.
  • Work in a kitchen environment where temperatures may vary.
  • Be physically mobile with reasonable accommodations, including the ability to push, pull, carry, and lift up to 25 lbs., and perform tasks such as reaching, bending, twisting, stooping, stacking, crouching, kneeling, and balancing in various work areas.
