Key Responsibilities:

The primary goal of the Assistant Banquet Chef role is to manage the daily functions of the banquet culinary team under the guidance of the Executive Chef. This involves overseeing the banquet kitchen operations while ensuring profitability and maintaining high standards of quality.

Essential Duties Include:

  • Maintaining an organized collection of recipes, detailing ingredients, portions, and preparation methods for each dish.
  • Collaborating with the Executive Chef to create banquet menus and recipe specifications in accordance with established standards.
  • Setting portion control standards for each menu item, considering perceived value.
  • Ensuring strict adherence to all banquet recipes.
  • Taking charge of the banquet kitchen in the absence of the Executive Chef.
  • Monitoring daily inventory to guarantee quality and appropriate stock levels.
  • Managing food and labor expenses within budgetary constraints.
  • Coordinating staff training on equipment usage and sanitation practices.
  • Facilitating monthly meetings for the banquet kitchen team.
  • Participating in performance evaluations and necessary disciplinary actions.
  • Assisting the Executive Chef in staff development and coaching.
  • Attending management meetings and other required gatherings.
  • Upholding cleanliness and organization standards in the banquet kitchen.
  • Conducting daily inspections of the banquet kitchen area.
  • Assisting in tracking food costs and completing monthly inventory assessments.

Minimum Qualifications:

  • Culinary degree or equivalent training in the Hospitality/Restaurant sector - required.
  • 2+ years of relevant experience in a similar role - required.
  • Experience in luxury hospitality preferred.
  • Food Safety Manager certification preferred or to be obtained within 30 days.

Supervisory Responsibilities:

  • Supervision of Banquet Culinary Staff.

Work Environment:

  • Comfortable working in a shared, high-noise environment without a private office.
  • Able to adapt to frequently changing priorities and deadlines with professionalism.
  • Capable of working safely in a high-temperature kitchen environment.
  • Work schedules may vary based on business needs.

Physical Demands:

  • Regularly required to lift up to 10 lbs and occasionally up to 50 lbs.
  • Must be able to travel by various means, requiring periods of sitting, standing, and waiting.
