We are seeking a highly skilled and experienced Pastry Sous Chef to join our team at Dominique Ansel Bakery and Workshop. As a key member of our pastry department, you will be responsible for leading a team of 15-20 people and overseeing daily production of all dessert items, including viennoiserie, pastries, and ice creams.
Key Responsibilities:
- Manage a team of pastry professionals to ensure high-quality production and presentation of all dessert items
- Develop and implement new dessert recipes and menu items in collaboration with our Executive Pastry Chef
- Oversee inventory management, ordering, and acceptance of daily deliveries to maintain cost margins
- Manage payroll, scheduling, and employee relations
- Collaborate with our Front-of-House team to establish and meet pars
- Ensure the organization and cleanliness of the kitchen, including storage and refrigeration areas
- Conduct daily quality checks of products and attend outside events and programs as needed
Requirements:
- Minimum 4 years of experience in a restaurant with a focus on pastry, including 2 years of managerial responsibilities
- Passion for food and pastries, with a strong knowledge of laminated dough, cakes, ice cream, chocolate, and sugar work
- Culinary school attendance and prior experience with service and expediting
- Dependable, hard-working, and sociable with excellent communication skills
- Ability to work on different shifts, weekends, and holidays
