Job Title: Sous Chef de Table

Join our culinary team at Per Se, a three-Michelin-starred restaurant located in the Deutsche Bank Center at Columbus Circle. As a Sous Chef de Table, you will play a key role in ensuring the highest standards of food quality and cleanliness in our kitchen.

Responsibilities:
  • Collaborate with the Pastry Chefs to oversee kitchen production and maintain the restaurant's standards.
  • Supervise the team to ensure a clean, sanitary, and safe work environment.
  • Communicate effectively with team members to achieve standards.
  • Assist in achieving company objectives in sales, quality, appearance of facilities, and sanitation.
  • Prioritize daily work schedules with Chef de Parties and delegate tasks to commis and externs.
  • Develop staff in all areas of food education.
  • Prepare paperwork and schedules in an organized and timely manner.
  • Manage labor costs and ensure all positions are staffed when needed.
  • Receive and inspect products according to receiving policies and procedures.
  • Administer employee performance and mentorship.
  • Communicate with Chefs on daily progress and plan for the next day.
  • Ensure equipment and the environment are kept clean and in excellent working condition.
  • Attend employee meetings and bring suggestions for improvement.
  • Comply with federal, state, county, and municipal regulations.
Requirements:
  • 3-5 years' experience in similar settings.
  • High School Diploma or equivalent.
  • State Health Certificate.
  • Strong interpersonal skills and ability to communicate clearly.
  • Ability to positively impact others and work in a fast-paced environment.
  • Able to reach, bend, stoop, and frequently lift up to 50 lbs.
  • Able to work in a standing position for long periods.
  • Frequent exposure to nuts, nut flour, and fruit berries.
