Job Title: Executive Sous Chef

We are seeking an experienced and skilled Executive Sous Chef to join our culinary team at The Westin Anaheim Resort. As a key member of our kitchen operations, you will be responsible for overseeing the efficient running of kitchen operations, ensuring high-quality food preparation, and maintaining the highest standards of presentation.

Key Responsibilities:

  • Assist the Executive Chef in all restaurant, bar, and banquet outlets
  • Oversee kitchen operations, ensuring compliance with Westin Anaheim standards
  • Update work schedules for cooks and chefs
  • Ensure junior chefs adhere to the recipe review program
  • Monitor food preparation processes and correct errors
  • Attach recipe reviews and culinary checklists to management reviews
  • Monitor cooks' working hours and note punctuality and overtime
  • Oversee loading and control fresh food quality
  • Ensure proper storage of fresh products and other food items
  • Supervise junior chefs and provide training to new recruits
  • Maintain consistency and quality in food taste
  • Communicate with receiving daily to ensure food deliveries are accounted for
  • Conduct regular checks on coolers to prevent unexpected shortages
  • Monitor food preparation processes in all food outlets
  • Provide food requisitions daily to ensure adequate provisions
  • Assist in banquets and catering to ensure efficient execution
  • Oversee daily operations of Tangerine Restaurant
  • Assist the Executive Chef in menu development
  • Monitor labor and productivity of culinary staffing
  • Work with FOH management and department heads to ensure proper service and quality
  • Ensure all culinary staffing meets business needs and guidelines
  • Meet all budgetary guidelines

Requirements:

  • 2-3 year degree in Culinary Arts, Hotel and Restaurant Management, or related major
  • Minimum 5 years of experience as an experienced Chef in a full-service hotel
  • 2-3 years of experience managing a culinary operation
  • Proven experience in catering and banquets required
  • High level of creativity and high-quality standards
  • Complete knowledge and understanding of the hospitality industry, purchasing policies, and procedures
  • Proficiency in computer programs, including Micros and Microsoft Office Suite
  • Proven record of organization, detail-oriented, and ability to make productive decisions
  • Valid driver's license
