Job Summary:

The Executive Culinary Director will be responsible for preparing, cooking, and presenting food according to Paradise Coast Sports Complex standards. This position will also assist the kitchen staff with the daily upkeep of the facility's kitchen.

Key Responsibilities:
  • Menu Development: Create and oversee menu items that meet the high standards of Paradise Coast Sports Complex.
  • Food Preparation: Train and assign duties of the kitchen team during the preparation, cooking, and garnishment of food.
  • Inventory Management: Ensure proper receiving, storage, and rotation of food products so as to comply with Health Department regulations.
  • Cost Control: Adhere to procedures for cost and quality control.
  • Cleaning and Maintenance: Supervise daily and monthly cleaning of walk-ins according to Health Department regulations.
  • Equipment Maintenance: Report any equipment in need of repair.
  • Food Service: Cook and prepare food, serve food in proper pre-determined portion sizes and at the correct temperature.
  • Appearance and Maintenance: Maintain appearance of all equipment and serving counters.
  • Inventory Management: Maintain inventory in the stock room.
  • Cleaning and Sanitation: Clean kitchen area before and after business hours, scrub, sanitize, and store pots and pans, utensils, and dishes.
Requirements:
  • Communication Skills: Understand and follow both oral and written instructions.
  • Availability: Must be available on weekends, nights, and some weekdays.
  • Independence: Must be able to work independently with minimal supervision.
  • Time Management: Effective time management skills.
  • Experience: Prior experience in the food industry preferred.
Working Conditions and Physical Effort:
  • Working Environment: Fast-paced working environment.
  • Lifting and Moving: Must be able to lift and/or move up to 30 pounds infrequently.
  • Physical Risk: Limited exposure to physical risk.
  • Physical Effort: Limited physical effort required.
