Key Responsibilities
  1. Train and validate all culinary team members through the use of Sterling's kitchen training materials.
  2. Maintain a fun and professional work environment grounded in our values, guiding principles, and promises.
  3. Participate in new team member onboarding and orientation to the Sterling Way.
  4. Ensure food quality and standards are met through ongoing systems and processes.
  5. Maintain a standardized training program for all positions and ensure prep and service recipes are current and available.
  6. Provide regular feedback to the Chef de Cuisine on team member performance.
  7. Accountable for cross-training culinary team members on all aspects of the line.
  8. Support the Chef de Cuisine and management team in all café priorities.
  9. Ensure 100% adherence to all menu implementations and procedural changes.
  10. Lead by example, setting high standards for every shift and every day.
  11. Help the Chef de Cuisine run a great features program every day within the guidelines established in the Sterling Food Philosophy.
  12. Maintain a guest-friendly environment at all times.
  13. Perform *Dress for Success* procedures before and after each shift.
  14. Cook times are adhered to and communicated to the team regularly.
  15. Run continuing café education on food specs and standards for both front and back of the house through pre-shift meetings.
  16. Assist with weekly inventories.
  17. Assist the Chef de Cuisine with reviewing pricing from vendors and ensuring accuracy.
  18. Help ensure all orders are checked in to standard, establish par levels, and execute for our guests in a Sterling Way.
  19. Aid in the improvement of year-over-year performance at your café.
  20. Point person for BOH maintenance and establish and maintain an equipment repair log.
  21. Keep the kitchen clean and well-maintained.
  22. Ensure the walk-in is cleaned and organized daily.
  23. Visually inspect food deliveries and use only the freshest fruits, vegetables, meats, and other food products of the highest standard in the preparation of all menu items.
  24. Monitor to ensure proper receiving, storage (including temperature setting), and rotation of food products to comply with health department regulations.
  25. Properly rotate food products to keep spoilage and waste to a minimum.
  26. Maintain industry-leading safety and sanitation standards for the café.
  27. Ensure local and federally mandated health code and regulations are followed, achieving a Health inspection rating of A.
  28. Complete daily line checks.
  29. Never turn a head on a standard; choose not to serve.
  30. Do whatever it takes to fix any issue.
  31. Ensure all proper utensils are used daily.
  32. Help with continuing education on food specs and standards for both front and back of the house through thoughtful pre-shift meetings.
  33. Assist with purchasing products to spec from Sterling's approved vendors.
  34. Aid in the education and development of team members on proper sanitation issues.
  35. Work closely with the Chef de Cuisine and the Health department to be proactive about café sanitation.
  36. Play a proactive role in teaching and training management and hourly team members about kitchen safety.
  37. Execute daily and monthly equipment cleaning schedules.
  38. Complete weekly R&M walkthroughs with the GM as directed.
