Job Summary:

Loews Ventana Canyon Resort is seeking an experienced Culinary Operations Manager to oversee the smooth operation of our restaurant food production activities. This key role involves ensuring optimal performance, adhering to departmental guidelines and policies, and maintaining a cost-effective kitchen environment.

Key Responsibilities:

  • Manage staffing levels to optimize kitchen performance and ensure labor management, inventory control, and adherence to sanitation standards.
  • Represent the chef in their absence and administer departmental procedures.
  • Oversee kitchen opening and closing operations, including food preparation, production, and storage.
  • Ensure compliance with government regulations and hotel standards.
  • Mentor and train team members, conduct performance evaluations, and promote teamwork skills.

Requirements:

  • ACF certification or culinary degree from a recognized institution and equivalent experience.
  • 5-7 years in quantity food production, with 3-5 years in supervisory roles.
  • Excellent culinary skills, knowledge of food production techniques, and leadership abilities.
  • Ability to lift 35 pounds, work flexible schedules, and communicate effectively.
