POSITION SUMMARY:
The Pastry Sous Chef collaborates closely with the Pastry Chefs to oversee and manage specific kitchen operations, ensuring adherence to the restaurant's high standards of food quality and hygiene.

KEY RESPONSIBILITIES:

  • Work in partnership with the culinary team to enhance guest experiences, service quality, and operational efficiency.
  • Guarantee that all food items are consistently prepared and presented according to established culinary standards.
  • Supervise kitchen staff to maintain a clean, safe, and organized workspace at all times.
  • Facilitate effective communication among team members to ensure standards are met.
  • Assist in meeting company goals related to sales, quality, and cleanliness through training and fostering a positive work environment.
  • Prioritize daily tasks with Chef de Parties and delegate responsibilities to commis and externs for optimal workflow.
  • Focus on the continuous development of staff in culinary knowledge and skills.
  • Complete necessary paperwork in an organized and timely manner as required by management.
  • Schedule labor according to anticipated business levels while ensuring adequate staffing and labor cost management.
  • Ensure accurate receipt of products and compliance with receiving protocols.
  • Be well-versed in bakery policies and collaborate with Human Resources to address employee performance issues fairly and consistently.
  • Encourage team members to mentor each other to achieve their professional goals.
  • Communicate daily progress and plans with the Chefs to ensure smooth operations.
  • Maintain cleanliness and functionality of kitchen equipment through regular inspections and adherence to maintenance protocols.
  • Participate in scheduled meetings, contributing suggestions for improvements and addressing any operational concerns.
  • Comply with all health, safety, and labor regulations relevant to the restaurant environment.
  • Perform additional duties as assigned.

QUALIFICATIONS:

  • 3-5 years of experience in a similar culinary environment.
  • High School Diploma or equivalent.
  • State Health Certification.
  • Strong interpersonal skills with the ability to communicate effectively.
  • Ability to positively influence others.
  • Capable of thriving in a fast-paced, dynamic environment.
  • Able to lift up to 50 lbs and work in a standing position for extended periods.
  • Frequent exposure to various allergens, including nuts and fruits.
