Job Title: Food and Beverage Manager

Join The Sebastian Vail team as a Food and Beverage Manager, responsible for overseeing the operation of Leonora Restaurant, In Room Dining, and Pool Service. As a key member of our hospitality team, you will ensure exceptional guest experiences, manage staff, and drive revenue growth.

Key Responsibilities:
  • Direct oversight of Leonora Restaurant and In Room Dining, including financial performance, guest satisfaction, and staffing.
  • Ensure services standards exceed guest expectations.
  • Oversee ordering and purchasing of all supplies for the outlets.
  • Manage payroll and tip distribution for all outlets.
  • Work with the beverage manager on the oversight of Frost, resort bars, and the beverage program.
  • Oversee the hiring, training, professional development, and discipline of staff.
  • Plan, organize, administer, review, and evaluate the work of service staff.
  • Develop and direct the implementation of goals, objectives, policies, procedures, and work standards for the department.
  • Identify and execute unique and creative solutions for resolving everyday problems.
  • Represent the department in the safety committee.
  • Maintain Aloha and regularly update systems as needed.
  • Perform analyses of pricing in relation to competition.
  • Ensure attainment of budgeted food sales, beverage sales, and labor costs; achieve maximum profitability and overall success by controlling costs while providing quality of service.
  • Hold daily Line Up meetings with the team and with the Executive Chef or Sous Chef to ensure VIPs, specials, etc., are properly communicated.
  • Participate in the development, implementation, and management of food and beverage marketing activities.
  • Manage compliance with cash handling procedures.
  • Develop and maintain staff schedules.
  • Assist in menu planning and pricing.
  • Assist with month-end inventory.
  • Comply with all health and safety regulations.
  • Knowledgeable on food safety and alcohol service regulations. Train staff on these regulations and ensure that all food safety and alcohol service requirements are followed.
  • Ensure the maintenance of bar control policies.
  • Attend regular operational and department meetings.
  • Establish and maintain effective relationships with guests and owners to ensure guest satisfaction and repeat business.
  • Ensure that staff maintains a professional attitude and proper appearance and uniform standards.
  • Contribute to the efficiency and effectiveness of the unit's service to its customers by offering suggestions and directing or participating as an active member of a team.
  • Demonstrate courteous and cooperative behavior when interacting with the public and staff; act in a manner that promotes a harmonious and effective workplace environment.
  • Willingness to work flexible days, nights, weekends, and holidays as well as whatever hours are required for the success of the operations.
  • Perform other duties as assigned by the manager.
Requirements:
  • Serve Safe Certification.
  • TIPS or Vail Responsible Alcohol Servers Training Certification.
  • Bachelor's degree in hotel management or a closely related field; AND five (5) years of food and beverage operations experience; OR an equivalent combination of education, training, and experience.
