Supervises: Line Cooks, Stewards

General Overview: The Sous Chef plays a pivotal role in the kitchen, having earned their position through hard work and dedication. This role is essential for guiding the kitchen team and ensuring seamless operations. The Sous Chef must possess a comprehensive understanding of all kitchen functions and be a vital link between the Chef de Cuisine (CDC) or Executive Chef (EC) and the line cooks. Mastery of each station and the ability to lead the team effectively are crucial.

Key Responsibilities:

  • Oversee service periods and manage kitchen crew.
  • Maintain a broad awareness of all kitchen activities.
  • Assess the strengths and weaknesses of line staff, delegating tasks appropriately while setting clear expectations.
  • Provide guidance to line staff on recipe techniques and station preparation, addressing any inquiries they may have.
  • Stay informed about all menu updates, regardless of service periods.
  • Communicate important information regarding daily service to line staff upon their arrival, including menu changes and station assignments.
  • Ensure stewarding staff adhere to their opening, closing, and mid-service responsibilities, collaborating with the CDC on supervision.
  • Keep walk-ins and dry storage areas clean and organized.
  • Assist in ordering daily and weekly supplies in conjunction with the CDC.
  • Monitor food and labor costs, implementing strategies to control expenses during service periods.
  • Collaborate with the CDC and/or EC on menu development and innovation.

Qualifications:

  • At least two years of experience in a fine dining environment.
  • Proficient in professional cooking techniques and knife skills.
  • Knowledgeable about safety, sanitation, and food handling protocols.
  • Able to work flexible hours, including nights and weekends.
  • Dependable, responsible, and punctual.
  • Strong communication skills; must be able to speak, read, and understand English.
  • Maintain a clean and professional appearance.
  • Exhibit enthusiasm for the mission and values of 21c.
  • Must successfully pass a background check.

Travel Requirements: As needed.
