Migis Lodge on Sebago Lake is seeking a seasoned culinary professional to lead our food and beverage operations. As a respected destination resort, we offer a unique blend of traditional and modern cuisine, with a focus on using locally sourced ingredients and creative presentation.
Key Responsibilities- Menu Development: Collaborate with our General Manager to create seasonal menus that reflect our resort's history and values, while also incorporating fresh and local ingredients.
- Food Safety and Quality Control: Ensure that all food preparation and presentation meet the highest standards of quality and safety, adhering to regulations and guidelines set by MEMIC, OSHA, and the Maine Department of Health and Human Services.
- Team Management: Lead and motivate a team of up to 30 kitchen staff, including interviewing, hiring, training, scheduling, and evaluating employees.
- Collaboration and Communication: Participate in weekly meetings with property-wide agendas and review BEOs, disseminating information to kitchen staff and creating action plans as needed.
- Food Cost and Labor Management: Proven ability to manage and control food costs and labor expenses, with a strong background in managing large-scale food production and inventory.
- Culinary Experience: Minimum 5 years as an Executive Chef with strong banquet and catering background, preferably in a comparable destination high-volume seasonal resort.
- Leadership and Management: Proven ability to manage and hire a large seasonal staff, with experience in mentoring and training employees of various skill levels.
- Food Safety and Quality: Strong understanding of food safety regulations and quality control procedures, with experience in maintaining cleanliness and sanitation standards.
- Communication and Collaboration: Excellent communication and interpersonal skills, with the ability to work effectively with cross-functional teams and external partners.
- Salary Range: $90,000 - $110,000, plus a tiered metric-based bonus structure, based on experience. Relocation stipend available.
- Employment Status: Full-time, year-round position with a flexible winter schedule.
