The Culinary Service Specialist II is responsible for performing moderately complex food service tasks during assigned shifts in the Central Kitchen or designated serving areas under general supervision.

Responsibilities include preparing, portioning, distributing, and serving food for both regular and therapeutic diets, as well as maintaining sanitation standards for equipment, work areas, and utensils.

Additional duties may be assigned as needed, including training and overseeing other food service staff. It is essential to maintain a thorough understanding of the role's requirements and adhere to food handling regulations as outlined by federal, state, and HACCP guidelines. Flexibility to work weekends, holidays, and unusual hours may be required.

Key Responsibilities:

Regular attendance is expected, with the possibility of working specific or rotating shifts, extended hours, and overtime as per agency policies. Additional duties may include:

  • Completing required training in accordance with policy.
  • Assisting in the preparation and portioning of food for special diets while adhering to food service protocols.
  • Preparing scheduled snacks and maintaining an adequate supply of snack items.
  • Participating in the safe and sanitary distribution of food as per food service policies.
  • Assisting in food service by following established procedures.
  • Ensuring proper food handling in compliance with food service protocols and regulations.
  • Receiving food and supply deliveries from vendors as assigned.
  • Timely preparation of necessary paperwork.
  • Following sanitation procedures for cleaning kitchen and food preparation areas.
  • Observing safety protocols and practices.
  • Training or assisting in training new food service staff to ensure a knowledgeable team.

Additional responsibilities may include participation in disaster response efforts or continuity of operations planning, which may necessitate alternate shift assignments or locations.


Required Knowledge, Skills, and Abilities:

Familiarity with food preparation techniques, food storage standards, and sanitation regulations is essential. Skills in operating and sanitizing food service equipment are required.

The ability to prepare and serve food, maintain cleanliness in dining and food preparation areas, and keep accurate records is crucial.

Proficiency in English, both spoken and written, is necessary. Candidates should be able to follow written and verbal instructions, perform basic math related to cooking and preparation, and lift a minimum of 25 pounds. Physical stamina to stand or walk on hard surfaces for extended periods, as well as the ability to work in varying temperature conditions, is required. Additionally, candidates should possess the ability to work collaboratively with colleagues and residents.
