Job Summary

The Biltmore Company is seeking a highly skilled and experienced Executive Chef to join our team at The Biltmore Estate. As a key member of our culinary team, the Executive Chef will be responsible for leading the culinary operations of our upscale restaurant, The Stable Cafe.

Key Responsibilities
  • Develop and implement new menu items and specials, ensuring high-quality dishes that meet the expectations of our discerning guests.
  • Oversee the purchasing, inventory management, and cost controls to ensure efficient operations and maximum profitability.
  • Manage the culinary staff, providing coaching, counseling, and discipline as needed, while also promoting a positive and inclusive work environment.
  • Establish and assign production and preparation tasks daily, ensuring seamless execution and exceptional guest service.
  • Ensure compliance with all local, state, and federal regulations and guidelines, maintaining a safe and healthy working environment for staff and guests.
  • Collaborate with the leadership team to develop and implement strategic plans, budgets, and financial goals for the culinary department.
  • Plan and execute banquet events, both indoors and out, for groups ranging from 20 to 300 people, ensuring exceptional quality and service standards.
Requirements
  • High school diploma required; additional education, training, and/or certification(s) strongly preferred.
  • Minimum of seven (7) years of related culinary management experience; equivalent combination of education/experience considered.
  • Excellent culinary skills and knowledge of F&B financials, purchasing, cost controls.
  • Demonstrated leadership skills and commitment to world-class internal/external guest service; proven ability to build, develop, and motivate teams a must.
  • Proficiency with Work, Outlook, Excel; ability to learn Biltmore's systems/protocols.
  • Outstanding interpersonal and written/verbal communication skills; must be able to communicate with different audiences effectively.
  • Strong organizational and planning skills with focus on details and quality.
  • Proactive and exercises good judgment; troubleshoots and creatively problem solves.
  • High level of professionalism and integrity; works comfortably in a corporate setting.
Physical Requirements
  • Ability to bend, stoop, stand, and lift up to 50 pounds frequently.
  • Works in a kitchen environment with fluctuations in temperature and conditions.
  • May be required to travel in support of recruitment programs; must have a valid driver's license.
  • Must be able to stand/walk for extended periods of time.
