The Biltmore Company is seeking a highly skilled and experienced Executive Chef Assistant to join our team. As a key member of our culinary leadership team, you will be responsible for assisting the Executive Chef in overseeing the daily operations of our kitchen, ensuring exceptional quality and service to our guests.
**Key Responsibilities:**
1. Assist the Executive Chef in supervising and managing kitchen staff, including scheduling, performance management, and training.
2. Collaborate with the Executive Chef to develop and implement menu concepts, recipes, and presentation styles that meet our high standards.
3. Ensure that all kitchen operations are running smoothly, efficiently, and in compliance with health and safety regulations.
4. Assist with inventory management, purchasing, and food cost control to maintain profitability.
5. Develop and maintain relationships with suppliers, farmers, and other industry partners to source high-quality ingredients.
6. Participate in menu engineering, pricing, and profitability analysis to optimize our culinary offerings.
7. Collaborate with the Executive Chef to develop and implement training programs for kitchen staff, focusing on skills development, safety protocols, and customer service excellence.
8. Assist with special events, catering, and banquets, ensuring seamless execution and exceptional guest experiences.
**Requirements:**
1. High school diploma or equivalent required; culinary degree or certification preferred.
2. Minimum 3 years of experience in a senior culinary role, preferably in a fine dining or upscale hotel setting.
3. Proven track record of leadership, team management, and staff development.
4. Excellent communication, interpersonal, and problem-solving skills.
5. Ability to work effectively in a fast-paced kitchen environment, with attention to detail and a focus on quality and safety.
6. Proficiency in Microsoft Office, including Word, Excel, and Outlook.
7. Ability to lift up to 50 pounds, stand for long periods, and work in a dynamic kitchen environment.
**Physical Requirements:**
1. Ability to sit, stand, twist, bend, push, pull, walk, and lift up to 50 pounds on a regular basis for periods of up to 10 hours a day.
2. Ability to work effectively in a kitchen environment with occasional extremes in temperature and conditions (heat, cold, humidity) for an extended period of time.
3. Exposure to smoke, fumes, chemicals, and other particulates.
