POSITION OVERVIEW

This role collaborates closely with the Executive Chef to guarantee the culinary division functions efficiently, ensuring compliance with health regulations. The Culinary Operations Manager will act as a senior leader in the absence of the Executive Chef, mentoring the culinary team to foster departmental success. This position is instrumental in nurturing and advancing talent within the department, as well as assisting in the recruitment, hiring, and training of culinary and stewarding staff. Adhering to brand standards is essential to ensure that menus, presentation, food quality, and timely delivery align with client expectations.

KEY RESPONSIBILITIES

Food Quality and Production: Responsible for overseeing staff to guarantee the highest standards of food quality and production. Conduct daily line checks, expedite for quality assurance, and follow up as necessary. Ensure that food preparation and delivery standards are upheld for all dining services including banquets, room service, and a la carte offerings.

Menu Development and Presentation: Ensure exceptional presentation by utilizing records and photographs, monitoring that plate setups adhere to established standards. Depending on brand guidelines, meet menu revision timelines and oversee the entire process including internal analysis and menu engineering. Upon finalizing menu changes, train the team and develop new menu items, records, and photographs, while ensuring effective communication with other hotel managers.

Cost Management: Actively participate in managing kitchen expenses to enhance hotel profitability. Responsible for effective labor management through strategic scheduling and adjustments based on business demands. Adhere to procurement guidelines and apply sound business judgment to control food costs while maximizing revenue. Assist in preparing and managing the departmental budget and maintain company assets within budgetary constraints.

Guest Satisfaction: Ensure guest satisfaction by meeting food and beverage standards. Address guest concerns promptly and efficiently. Collaborate with kitchen staff to train and model operational standards, ensuring adherence to ticket times while maintaining high food quality.

Training and Development: Oversee the training of all employees and maintain training records. Analyze quality issues, identify training needs, and implement solutions to enhance results. Utilize available resources and comply with training policies to meet all company, brand, and department-specific training requirements.

Safety and Risk Management: Conduct regular inspections of food and beverage operations to uphold quality standards in accordance with regulations. Ensure a clean and safe working environment, following all procedures for guest and employee incidents.

People Management: Responsible for interviewing, hiring, and developing staff. Evaluate employee performance and provide coaching to meet standards. Motivate the team by setting goals, providing feedback, and recognizing achievements. Collaborate with management to address disciplinary actions and ensure compliance with training requirements.

Self and Workload Management: Demonstrate effective self and workload management. Exhibit clear communication skills and promote a collaborative, professional work environment across departments. Attend all relevant meetings to ensure proper communication and planning. Adhere to all standard operating procedures and assume the Executive Chef's responsibilities in their absence.

REQUIRED QUALIFICATIONS

Education: High school diploma or GED required. Culinary degree or equivalent experience preferred. Serve Safe certification or equivalent is required.

Experience/Knowledge/Skills/Abilities: A minimum of 5 years of progressive kitchen supervisory experience is required. Must possess strong attention to detail, effective communication skills, and problem-solving abilities. Ability to manage multiple priorities in a fast-paced environment is essential.

Physical Requirements: Ability to lift, push, and pull up to 50 pounds regularly throughout the shift. Must be able to work extended hours based on business needs, with physically demanding responsibilities including walking, standing, bending, carrying, and lifting.
