Kitchen Organization and Equipment Maintenance:

  • Develop the back-of-house schedule while maintaining a weekly labor cost of 20%, collaborating with the General Manager and utilizing relevant tools.
  • Complete daily and weekly orders, as well as quarterly inventory assessments.
  • Supervise the execution of preparation lists and line opening and closing procedures.
  • Ensure that recipes and all back-of-house instructional documents are created and maintained in both digital and printed formats for easy reference.
  • Emphasize the importance of quality, consistency, and speed in all kitchen operations.
