Job Summary

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at White Lodging. As a key member of our culinary team, you will be responsible for overseeing all aspects of food preparation and presentation in our hotel's kitchens.

Responsibilities
  • Support the Executive Chef in developing and implementing menus, recipes, and food preparation procedures.
  • Direct and manage a team of culinary staff, including cooks, sous chefs, and kitchen assistants.
  • Ensure compliance with all local health department regulations, corporate HACCP and food safety SOPs, and federal guidelines.
  • Organize and execute menu implementation, including creating menus, recipes, and use records.
  • Monitor food costs, inventory, and labor expenses to ensure budgeted levels are achieved.
  • Develop and implement training programs for culinary staff to improve skills and knowledge.
  • Collaborate with the sales department, executive management, and outlet FOH to develop and implement food and beverage marketing and sales programs.
  • Execute all accounting procedures, including F&B checkbook, food checkbook, invoice processing, payroll, monthly inventories, and P&L critiques.
Requirements
  • Associate's degree in Culinary Arts or Business Administration.
  • Minimum 3-5 years of experience in a similar role, preferably in a hotel or restaurant setting.
  • Strong leadership and management skills, with the ability to motivate and develop a team.
  • Excellent communication and interpersonal skills, with the ability to work effectively with cross-functional teams.
  • Knowledge of food safety and sanitation procedures, as well as local health department regulations.
  • Ability to work in a fast-paced environment, with a high level of attention to detail and organizational skills.
