The Culinary Preparation Specialist plays a vital role in the kitchen by organizing, preparing, and cooking a variety of food items for both banquet services and restaurant meals.


Key Responsibilities:

  • Prepare and cook dishes following established recipes, ensuring adherence to quality and presentation standards.
  • Set up necessary stations for all banquet functions and menu offerings.
  • Initiate the preparation of food items in advance, carefully managing quantities to avoid excess.
  • Label all food containers and rotate stock appropriately, ensuring perishables are stored at correct temperatures.
  • Monitor inventory levels for the shift, plan necessary food preparation, and assist in maintaining buffet supplies.
  • Evaluate all food for taste, temperature, and visual appeal.
  • Consistently check food quality and service during meal periods to meet portion control and quality expectations. Act as an expeditor during busy service times.
  • Utilize various cooking equipment including ovens, stoves, grills, microwaves, and fryers.
  • Maintain cleanliness in the kitchen area, including tables, tools, knives, and equipment.
  • Comply with sanitation standards, preventing cross-contamination and following proper food rotation practices to minimize spoilage.
  • Engage with the Executive/Sous Chef regarding anticipated business volumes.
  • Maintain open communication with all departments at all times.
  • Follow food preparation counts as outlined in Banquet Event Orders (BEO).
  • Review production sheets, BEOs, and inventory sheets to prepare for events.
  • Prepare all hot and cold food presentations for buffets, banquets, and a la carte services.
  • Finish desserts for various service styles including a la carte, buffets, and banquets.
  • Assist in pantry, hot line, and/or omelet station operations as needed.
  • Complete daily food requisitions.
  • Monitor for overproduction and ensure proper use of leftovers.
  • Strictly adhere to company recipe cards and procedures.

Qualifications:

  • Knowledge of food preparation, menu concepts, sanitation regulations, and safety protocols.
  • Effective communication skills with guests, management, and team members.
  • High School Diploma or equivalent; Culinary Program degree preferred. Minimum of 6 months experience in food preparation.
  • Ability to perform basic arithmetic and follow recipes accurately.
  • Must possess a valid Food Handler's card.
