Job Classification: Full Time-Exempt

The Charmant Hotel is an independent hotel on the banks of the Mississippi River. A transformed century-old candy factory featuring exposed brick, classic French interiors, and charm of the former building offers an exceptional venue that pairs Parisian sophistication and style with warm Midwestern hospitality. The hotel has 67 incomparable guest rooms, a restaurant, patio, coffee parlour, rooftop bar and woodfire oven kitchen, as well as functional event spaces for meeting and corporate gatherings. The hotel takes a sustainable and thoughtful approach to food, sourcing from local farmers and purveyors and producing regional new American cuisine based on classic French dishes and technique.

Job Description
As a team member of The Charmant Hotel, your job is to fulfill our mission, to provide an elevated guest experience, rooted in our unique history, while delivering the true spirit of hospitality. Creating an exceptional dining experience for guests are the expectations of this position.

Job Responsibilities

• Maintains responsibility for day-to-day operation of the kitchen and has complete responsibility for the kitchen
• Completes mis-en-place and sets up stations for meetings, breakfast, lunch, and/or dinner service
• Ensures correct preparation and presentation at an elevated and consistent level through production and demonstration
• Ensures timely and courteous follow-through on all client/vendors, guest, and team member requests
• Responsible for overseeing the Banquet Event Orders and leading the kitchen in banquet prep and execution
• Assists Culinary Director in the creation of menus, costing of said menus, descriptions and allergen matrices for service staff
• Assists in the interviewing, selection, supervision, training, development, scheduling, evaluating, disciplining, and coaching of Back of House staff
• Demonstrates positive leadership characteristics that empower and inspire employees to meet and exceed standards and leads by example
• Oversees purchasing, receiving and inventory of all kitchen items; follows up and executes action to correct any food cost problems
• Maintains standards for food quality, presentation, handling, sanitation, and safety. Follows all appropriate policies and procedures
• Follows all BOH protocols and policies, including waste management, par levels, etc.
• Attends all kitchen, management, and employee meetings as required
• Audits kitchen payroll on a bi-weekly basis
• Completes monthly food inventories
• Demonstrates behaviors consistent with The Weber Group (ownership) and Columbia Hospitality (Management Company) values and mission
• Adheres to grooming and appearance standards

Requirements

• A culinary arts degree and/or equivalent training with three or more years of culinary lead or supervisory experience in a similar environment; or an equivalent combination of education, training, and experience
• Possesses a strong background/knowledge of classic French technique
• ServSafe certification
• HACCP knowledge
• Ability to manage according to employment and industry-relevant laws
• Thorough understanding of excellent service, labor, maintenance, merchandising and accounting.
• Must demonstrate excellent people skills and a professional, friendly, and enthusiastic demeanor
• Must be flexible and able to perform multiple tasks, work in stressful situations with shifting priorities
• Be detailed oriented, reliable, and punctual, and have excellent organizational skills
• Reading, writing, and oral proficiency in the English language
• Excellent working knowledge of food, wine and cocktails, culinary equipment, and techniques
• Computer literate
• Ability to maintain food COGS and margin
• Ability to adjust labor as needed to meet business levels
• Reliable and punctual

Other Skills & Abilities

• Knowledge of food safety, safe food processing and preserving of raw food products
• Ability to effectively plan and execute flow of work
• Ability to demonstrate the following competencies: thoroughness, time management, initiative, and proficient communication
• Maintain a good working relationship with other associates by promoting teamwork and fostering a harmonious working climate

Physical Requirements

• Requires performing in a kitchen area with exposure to heat, cold, fumes, steam and noise
• Requires the employee to lift up to 50 lbs.
