Summary
Responsible for the daily operation of all Food & Beverage areas within the Casino and Brewery.

Duties and Responsibilities include but are not limited to the following:
  • Customer Service-Work with supervisory staff in each food service venue to ensure premium customer service and teamwork of staff members. Foster a work culture of trust and accountability.
  • Staffing- ensure all outlets are staffed appropriately, requests to fills submitted, and interviews are being conducted in a timely manner.
  • Scheduling of food and beverage managers and supervisors.
  • Employee Performance- recommends food service staff for additional training, or progressive discipline as deemed necessary. Ensure all employees are given performance appraisals annually or more often as necessary.
  • Profit- Maintain profit margin of outlets within acceptable levels.
  • Expenses-Assist Director in preparing annual budgets and work within parameters of the approved budget.
  • Quality- Ensure that food quality levels are strictly maintained, and guests’ have a positive overall experience.
  • Procedures-Continue to Develop and update Food & Beverage Standard Operating Procedures.
    • Ensure employee compliance with Casino policies and procedures.
  • Recording and reporting any suspicious activity as defined by the Bank Secrecy Act (Title 31) and Feather falls Casino Internal control policy Suspicious Activity Compliance Program.
  • Perform other duties as directed by the Director of Food and Beverage or General Manager
 
Supervisory Responsibilities
Responsible for overseeing all aspects of operation in food venues located throughout the Casino. Also delegating tasks to Supervisors and Managers when appropriate.  Works with the Executive Chef to maintain product levels and proper rotationQualificationsTo perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Experience – Minimum of 5 years’ experience in Restaurant Management
Special Skills – Demonstrated ability to provide team-building techniques for supervisory staff

Computer Skills
Experience with Microsoft Word, Excel, Outlook, and Power Point. Programming of POS systems preferred.
 Language SkillsAbility to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to communicate effectively with vendors, customers, and other employees. Mathematical SkillsAbility to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent.Reasoning AbilityAbility to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. Ability to define problems, collect data, establish facts and draw valid conclusions while providing optimum guest service.Certificates, Licenses, RegistrationsClass B Gaming License
