Sushi Master

We are seeking a highly skilled Sushi Chef to join our culinary team at Feather Falls Casino. As a Sushi Chef, you will be responsible for creating an exceptional dining experience for our guests by preparing and presenting high-quality sushi dishes.

• Inventory and evaluate all fish for the day to ensure freshness and availability of ingredients.
• Create visually appealing food presentations with artistic balance and color.
• Interact with and educate diners, challenging experienced diners and assisting new sushi eaters.
• Maintain a clean and organized work station, including proper storage of perishable items.
• Clean and sharpen sushi knives.
• Adhere to food standards set by the Food & Beverage Director and the Brewery Executive Chef.
• Collaborate with the Brewery Executive Chef to develop new sushi recipes and follow established control procedures.
• Maintain inventory control, purchasing, and record-keeping systems.
• Communicate any issues or concerns to the Brewery Executive Chef in a timely manner.

• High School Diploma or equivalent required.
• Minimum 1-year experience as a sushi chef.
• Knowledge of sushi-grade fish.
• Ability to read and interpret documents, communicate effectively with guests and employees.
• Mathematical skills to perform calculations and computations.
• Reasoning ability to apply common sense and problem-solving skills.

• Ability to stand for up to 8 hours.
• Ability to walk, maintain balance, and navigate through a working kitchen and dining area.
• Ability to reach overhead, climb, balance, stoop, kneel, and crouch.
• Ability to frequently lift and/or move up to 75 pounds.

The employee is regularly exposed to tobacco smoke and may be exposed to loud noises and bright lights.

Candidates for all positions must be at least 21 years of age and be able to pass a background check and drug screen. Applicants must have a California I.D., a Social Security Card, and a Birth Certificate.
