The Bakery Operations Manager supports Tatte’s efforts to provide comfort and joy, and to inspire, care for and nurture life, every day, by managing all non-production functions in our Bakery and assisting the Bakery General Manager with overall oversight of the Bakery. The Bakery Operations Manager is responsible for Bakery purchasing, logistics, inventory management, Bakery customer service, and compliance with all relevant safety and quality standards, and supports bakery leadership team in various respects, including, but not limited to, overall financial accountability in the bakery, key initiatives, team member safety, new deployments and other company initiatives. The Bakery Operations Manager also exemplifies each of our core values—Uncompromising Quality and Craftsmanship; Always Learn, Grow, Be Curious & Creative--Have Fun; Be kind. Summary of Responsibilities

  • Assists with maintaining and protecting the integrity of the bakery pillar in Tatte’s brand essence
  • Oversees all purchasing, receiving and inventory management of raw material and other items necessary to run the bakery
  • Responsible for all non-production staffing in the bakery, including ensuring adequate staffing, onboarding, managing, providing timely feedback to, developing and growing all non-production bakery team members
  • Ensures that accurate schedules are posted on a timely basis
  • Shares primary responsibility with the Bakery General Manager in ensuring training of, adherence to, and implementation of standard operating procedures concerning all GMP, Food Safety and Safety practices/policies/regulations. Among other things:
    • Regularly conducts GMP, Food Safety and Safety audits, reports findings, and recommends corrective actions, as needed
    • Ensures proper management of allergens throughout the bakery
    • Ensures all regulatory documentation is completed accurately and on a timely basis as well as stored properly
    • Assists with daily coaching and counseling of all team members in quality standards, food safety, and safety practices
    • Assists with investigation and resolution of complaints on quality, product execution, and shelf-life issues or questions
  • Oversees logistics, including, without limitation, to and from our cafés and catering kitchens
  • Ensures all vehicles are maintained properly and operate in compliances with state laws
  • Oversees all Bakery premises and equipment repair and maintenance issues
  • In conjunction with the General Manager, monitors bakery facility, capabilities, and equipment capacity to ensure the Bakery can meet market needs while supporting profitable growth
  • Resolves issues raised by customers (i.e., cafes, catering kitchens, and Tatte at Home) on a timely basis
  • In partnership with Bakery leadership, shares responsibility of the Bakery P&L and assists in discovery and timely resolution when variances occur
  • Assists Bakery team with production and operational planning, including effectively and efficiently managing labor expenses and waste
  • Ensures team members follow all safety, sanitation, and cleanliness standards (Tatte, Local, State and Federal) of the entire premises, including sharing the responsibility of local and federal food inspections along with the Department of Transportation guidelines
  • Maintains strong and effective relationships with all Tatte managers, supervisors and support team members
  • Promotes, models, and maintains Tatte culture and ensures all Tatte Polices are adhered to
  • Actively participates in management meetings to ensure effective and accurate communication of all relevant product and operational information
  • Maintains understanding of and follows crisis management procedures
  • Other duties, as assigned

Working Conditions / Essential Functions

  • Able to stand for 10 hours per shift/day, 5-days a week for an average workweek of 50 hours
  • Able to push, lift and carry 50lb regularly
  • Able to grasp and reach overhead
  • Ability to work flexible hours and days, including holidays and weekends
  • 2+ years of experience managing teams of 50+ people (preferably in the hospitality or food manufacturing industry)
  • PCQI Certification (or a willingness to obtain PCQI within 6 months of hire)
  • Valid driver’s license and ability to drive Tatte trucks as needed
  • Excellent communication and time management skills
  • Ability to multi-task in a fast-paced, high-volume production bakery
  • Positive, can-do attitude
  • Strong analytical skills, focused, organized, attention to detail, and accuracy

Other Preferred Skills

  • 5+ years of experience leading a high volume, fast paced food manufacturing plant
  • Deep understanding and effective management of regulatory standards (e.g., OSHA, FDA inspections, Health Dept., EPA, City and County Inspectors)
  • Familiar with Good Manufacturing Practices
  • Experience with implementing and maintaining quality systems and programs
  • Experience building and mentoring high performance teams
  • Fluency in Spanish
