DESCRIPTION:

A notable Rhode Island restaurant group known for their fine dining restaurants and fine foods grocery seeks an Executive Pastry Chef with a deep background in high volume pastry production (with a specialty in specialty cakes) to oversee the day to day operations and logistics of production of all pastries for several locations of the restaurant groups fine dining restaurants, food retail, and events programs.


Pastry production will include specialty cakes (wedding cakes, event cakes), prepared ingredients for plated desserts, as well as grab and go desserts for grocery retail.


The Executive Pastry Chef will be responsible for leading and executing daily activities of the pastry department in the Newport Rhode Island area including development, preparation, and execution of dishes, and training, development, and management of the culinary team with the goal of offering an elevated culinary experience.


Ideal candidates will have worked in fine dining restaurant kitchens as well as have experience in high volume bakery production. Candidates who will be considered are people who foster a healthy and collaborative work environment


REQUIREMENTS

Candidates should have the following background:


  • Experience with multi-unit concepts including menu development, leading menu change process, etc.
  • Experience leading a commissary bakery or production bakery to include leading the order fulfillment and delivery logistics
  • Experience in retail bakery merchandising including packaging and display
  • Expert experience with fine dining cooking techniques.
  • Minimum 4+ years of culinary pastry management experience in a fine dining atmosphere and/or high volume specialty cake/bakery business
  • Must be authorized to work in the United States
  • Understand how to manage all financial aspects of the pastry department.
  • Have excellent organizational skills and be be able to manage priorities
  • Commitment to quality, excellence, and genuine hospitality
  • Highly organized and self-motivated, with the ability to manage multiple priorities under time constraints
  • Excellent interpersonal skills with the ability to manage sensitive and confidential situations with tact, professionalism, and diplomacy.
  • Excellent verbal and written communication skills with the ability to present information
  • Excellent team management and leadership skills
  • Strong organizational skills and exceptional attention to detail.
  • Ability to prioritize time and meet deadlines under time constraints.
  • Creative problem solving and critical decision-making skills
