Job Summary

We are seeking an experienced and skilled Executive Pastry Chef to join our team at Balboa Bay Resort & Club. As a key member of our culinary team, you will be responsible for leading the pastry department and ensuring that our guests receive the highest level of service and quality.

Key Responsibilities
  • Leadership and Management: Manage subordinate team members responsible for pastry preparation, ensuring that they meet or exceed guest expectations and provide a high level of guest satisfaction.
  • Operations and Quality Control: Monitor day-to-day pastry kitchen operations to ensure standards of product presentation and service are met, recommending corrective action as needed.
  • Inventory and Cost Control: Work to manage expenses and control wastage by planning adequate production quantities and portion control, utilizing computer systems to order product and input schedules.
  • Guest Service: Ensure that guests receive outstanding, consistent, exceptional service by collaborating with banquet, restaurant, and executive chef teams, seeking opportunities to improve satisfaction and immediately handling any guest concerns or complaints.
  • Sanitation and Compliance: Ensure that all pastry kitchen areas are clean and properly set up, maintaining sufficient inventory of food, supplies, and equipment, and ensuring compliance with all food and beverage regulations.
  • Menu Development and Maintenance: Monitor recipes to ensure consistent exceptional food is provided, assisting in developing and updating policies and procedures, and participating in weekly meetings with the Culinary Management Team to ensure weekly goals, challenges, and food standards are met.
Requirements
  • Education and Experience: Completion of an approved Culinary Program or Apprenticeship, with an Associate's degree in Culinary Arts preferred. Two years of increasingly responsible pastry experience in a hotel environment required, with prior supervisory experience desired.
  • Leadership and Communication Skills: Ability to lead others in the department by mentoring and providing training that results in staff that meets or exceeds guest expectations and provides a high level of guest satisfaction.
  • Technical Skills: Ability to use computer systems used at the hotel, with strong attention to detail and the ability to handle multiple tasks.
  • Language Skills: Must be able to speak, read, write, and understand English to communicate with management, team members, and guests, with bilingual Spanish a plus.
  • Certifications and Licenses: Must have a valid current Food Handlers Card or willingness and ability to obtain one within 30 days of employment.
