As a member of the Culinary team, your vision is the first step in building unique concepts and the implementation and follow through of your processes will maintain that vision for the restaurant's existence.
Sous Chef / KM is responsible for daily operations of kitchen, station production and daily paperwork, execution of live checklist and procedures.
Minimum Requirements:
- Knowledge of high volume kitchen operations
- Ability to run all kitchen operations
- Knowledge of food costs, labor costs, and product costs
- Skill in cooking, cost controls, and management
- Crew development, and crew training procedures
- Knowledge of kitchen sanitation procedures
- Computer knowledge including Microsoft Word and Excel
- Position requires extended periods of prolonged standing and working on your feet
- Must be able to lift and/or move up to 150 lbs.
Essential Skills
· Ability to cultivate a culture where guests and staff are passionate about our concepts
· Proven record of thriving in high stress situations while overcoming unforeseen hurdles
· Five years successfully working in and/or supporting a highly rated restaurant while consistently exceeding goals
· An eager to learn - in all aspects of restaurant finance, inventory control, HR procedures and business operations
· Demonstrates an aptitude for developing, coaching and leading BOH managers while promoting a positive culture and work environment
