As the Food Cost Controller, you will be responsible for managing all aspects of inventory management, cost controls, and any related collaboration initiatives across our rapidly expanding restaurant group. This role demands exceptional organizational skills, strong analytical skills, a keen eye for detail, and a deep understanding of the food and beverage industry. As we continue to scale our operations into new markets, the Food Cost Controller will play a critical role in optimizing operational efficiencies and ensuring consistency in quality and profitability across all units.

Essential Duties & Responsibilities:

 

  • Implement and maintain standardized inventory management systems across multiple units to accommodate rapid growth.
  • Conduct frequent audits to ensure accurate tracking of food and beverage items and identify opportunities for improvement.
  • Coordinate with unit managers to monitor stock levels, anticipate demand, and optimize inventory turnover.
  • Establish protocols for inventory reconciliation and variance analysis to maintain data integrity across all units.
  • Collaborate with brand managers to develop agile ordering strategies that can quickly adapt to changing market conditions.
  • Review and approve purchase orders to ensure compliance with budgetary constraints and quality standards.
  • Analyze food and beverage costs and identify areas for cost reduction and optimization.
  • Develop and implement strategies to control food and beverage costs while maintaining quality standards.
  • Monitor portion sizes, waste, and pilferage to minimize losses and maximize profitability.
  • Collaborate with chefs and all stakeholders to analyze recipe costing and identify opportunities for cost savings and menu optimization across all units.
  • Monitor key performance indicators in real-time and pivot quickly to address cost overruns or inefficiencies as they arise.
  • Collaborate with senior leadership to develop and execute strategic growth initiatives that support the expansion of the restaurant group.
  • Foster collaboration and communication among brand managers, location supervisors, and other stakeholders to align objectives and priorities.
  • Organize regular meetings or workshops to share best practices, discuss challenges, and identify opportunities for improvement.
  • Serve as a central point of contact for cross-unit initiatives, facilitating information sharing and coordination of efforts.



Job Qualifications:

  • Bachelor's degree in hospitality management, business administration, or a related field (preferred).
  • 3-5 years proven experience in a similar role within a fast-growing multi-unit restaurant or hospitality group.
  • Strong analytical skills with the ability to interpret complex data and make data-driven decisions.
  • Excellent organizational and project management abilities to manage multiple priorities and deadlines effectively.
  • Proficiency in inventory management software, ERP systems, and MS Excel for data analysis and reporting.
  • Exceptional communication and interpersonal skills, with the ability to collaborate effectively with diverse stakeholders.
  • Deep understanding of food and beverage costing methods, procurement strategies, and industry trends.
  • Strategic mindset with the ability to develop and implement initiatives to drive operational excellence and financial performance.

At Hash Kitchen, breakfast classics are remixed and reimagined We are a buzzy brunchery with Instagrammable, creative daytime dishes and an exceptional, interactive build-your-own bloody Mary bar. Guests get to customize their cocktail from start to finish with house made bloody Mary mixes, house-infused spirits, and over 50 craft toppings. Our innovative concept combines chef-driven food and an elevated cocktail program with a next-level atmosphere. Working Conditions:

Position requires qualified individuals to see, hear and speak (verbally and audibly). Required to ascend and descend stairs; sit and stand for extended periods of time, lift up to 30 pounds, bend, stoop and kneel. May be required to work outside in various weather conditions. May be required to work on a computer for extended periods of time, including viewing the screen, using a mouse and manipulating a keyboard with hands, reaching with arms. May be asked to drive or travel by car, air, or other transportation for business purposes. Must be able to function effectively in a fast-paced working environment. Must be able to report to work responsive, free from sedatives, and in a non- sedative state. Must disclose prescribed and/or over-the-counter pharmaceuticals that may impair or affect the ability to perform the essential functions of the job. Natural and regular stressors occur on the job.
