Community-driven group is looking for a Chef de Cuisine passionate about California ingredients that speak to the local landscape, for their NEW opening focused on elemental cooking Unique opportunity to join a multi-faceted operation involving rotisserie, a woodfired grill and pizza oven, fresh pasta. Of note, while it is an all day concept, this role will be focused more so on dinner service. Looking for an individual that is passionate about local inspiration, live fire, and in-depth pasta program.
Chef de Cuisine Responsibilities:
- Deliver soulful, thoughtful food in a high volume setting that is consistent with company standards
- Collaborate with and support the team keeping an eye on current trends and seasonal ingredients
- Scheduling, hiring, training and mentoring culinary team members
- Proactively manage orders, inventory, costs, and budgets
- Follow best practices and uphold high standards for safety and sanitation in the kitchen
Chef de Cuisine Preferred Requirements:
- 3+ years of experience in a similar position (Senior Sous Chef, Executive Sous Chef, CDC) at an acclaimed, chef-driven concept that is doing at least 250 covers routinely
- Fresh pasta and pizza experience required
- Passion for California ingredients and using locally sourced products whenever possible
- Familiar with cost control measures, ordering, vendor management, invoices, scheduling, hiring, performance management
- Excellent communication skills and leadership qualities: team focused, and people driven
- Exceptional standards for cleanliness, health, and safety regulations
- Flexible schedule, including weekends, nights, and holidays
Compensation/Benefits Include:
- Base Salary Range of $90k-95k
- Medical benefits: 50% Coverage
- 2 weeks PTO
