Full job description


Aces & Ales is looking for an experienced and qualified Head Chef to organize the kitchen’s activities. You will be the first in command in the facilities and will create and inspect dishes before they arrive at the customers ensuring high quality and contentment.


Your leadership role is critical in supporting the execution of the restaurant strategy to achieve performance goals and drive profitable sales growth through all aspects of the restaurant. You’ll establish and cultivate a culture in your restaurant that’s aligned with Energy, Discovery, and Community.


Responsible for managing the daily operations of our restaurants, leading team members and delivering on financial expectations by providing hands-on leadership and direction to team members, managers, and ensuring an excellent guest experience that exceeds expectations. 


Head Chef at Aces & Ales must have a passion for food, strong knowledge of restaurant operations and finances, high standards of sanitation and safety, and the drive to grow and develop personally while developing those around you.


The right candidate must have the ability to motivate and manage staff, and at the same time hold them accountable for their performance.

Chef will have the duties of maintaining the consistency and standards of the current menu (without change), but have the culinary freedom to develop new menu items and special event menus (wine/liquor/food pairing)

What we’re looking for / Primary job responsibilities – Includes, but is not limited to:


• Provides guidance to kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating

• Maintain records of payroll and attendance

• Trains new kitchen employees to restaurant and kitchen standards

• Construct menus with new or existing culinary creations ensuring the variety and quality of the servings

• Approve and “polish” dishes before they reach the customer

• Plan orders of equipment or ingredients according to identified shortages

• Supervises all food preparation and presentation to ensure quality and restaurant standards

• Assist in recruiting qualified individuals

• Responsible for monitoring and developing team member performance to include, but not limited to, providing supervision, assisting with evaluations, training, and scheduling.

• Verifies that food storage units all meet standards and are consistently well-managed

• Coordinates with restaurant management team on supply ordering, budget, and kitchen efficiency and staffing

• Check quality of ingredients

• Keeps cooking stations stocked, especially before and during prime operation hours

• Monitor stock and place orders when there are shortages.

• Ensure compliance with federal, state, local and company health, safety, sanitation standards are attained.

• Report to work as schedule, on time and prepared to work.

• Other duties as assigned.


Physical Requirements


• Up-to-date with culinary trends and optimized kitchen processes

• Good understanding of useful computer programs (MS Office, restaurant management software, Toast POS preferred)

• Credentials in health and safety training

• Serve Safe certificate required

• Degree in Culinary science or related certificate

• Serve Safe Certification.

• Ability to walk and stand during entire shift; continuously reach, bend, lift, carry; be able to lift up to 50 lbs as needed.

• Ability to work in a fast-paced environment.

• Ability to effectively communicate in English.

• Polished appearance and demeanor.

• Ability to successfully lead and mentor a team.

• Ability to obtain & maintain full knowledge and understanding of company and department rules and regulations, policies and procedures.

• Capability to maintain a safe work environment, especially where open flames and sharp objects are present.
