Position Overview:
As the Banquet Chef at Tailwater Lodge, you will be an integral leader within our culinary team, specializing in the preparation and execution of large-scale events including weddings, social and corporate gatherings, and more. Working closely with the Leadership, Owernship, and Property Executive Chef, you will oversee all banquet kitchen operations, ensuring the highest quality of food is delivered consistently for all events. Your culinary expertise, organizational skills, and dedication to excellence will drive the success of our banquet team and enhance the overall guest experience at our events.

 

Key Responsibilities (include but are not limited to):

 

Culinary Excellence:

Collaborate with the Property Executive Chef to develop and maintain banquet menus that align with Tailwater Lodge concept, showcasing creativity and meeting diverse customer expectations designed to be easily executable in a variety of event settings. Direct and supervise food preparation activities for banquets, ensuring adherence to established recipes, quality standards, and food safety guidelines. Continuously monitor and maintain the presentation, taste, and consistency of all banquet/event dishes, seeking ways to elevate the culinary experience.

 

Team Management and Training:

Provide strong leadership, guidance, and mentorship to the banquet kitchen team. Participate in retaining, training, and developing kitchen staff, ensuring they possess the necessary culinary skills and knowledge to excel in their roles and to execute events in a timely and organized manner. Foster a positive and collaborative work environment, promoting teamwork and effective communication among banquet staff.

 

Banquet Operations:

Oversee day-to-day banquet kitchen operations, including food production, product rotation, and equipment maintenance. Collaborate with the leadership team to optimize banquet kitchen and service workflow, streamline processes, and improve operational efficiency. Ensure a clean, organized, and sanitary kitchen environment, adhering to food safety and sanitation standards at all times. Implement effective strategies for ingredient storage, rotation, and waste reduction to maximize freshness and minimize costs.

 

Quality Control:

Conduct regular quality control checks to ensure all banquet dishes meet Tailwater Lodge high standards of taste, presentation, and portioning. Monitor and control food costs by effectively managing portion sizes, minimizing waste, and optimizing ingredient usage. Collaborate with the Corporate Chef to identify areas for improvement and implement necessary changes to enhance overall banquet kitchen operations.

 

Business Acumen:

Demonstrate an interest and intrigue in business operations and objectives, with the willingness to understand and learn metrics relevant to the organization and the industry. Demonstrate an understanding of how the role of Banquet Chef influences the company’s event program longevity. Demonstrate a general eagerness to learn and develop food/menu and beverage knowledge, keeping up to date with industry event trends.

 

Qualifications and Skills:

Previous experience of 3+ years as a Banquet Chef or similar role in a fast-paced event-driven environment. Strong culinary skills with a focus on large-scale food preparation and presentation. Proven leadership abilities, with the capability to inspire and motivate a banquet kitchen team. Excellent organizational and time management skills, with the ability to prioritize tasks and meet deadlines. In-depth knowledge of food safety and sanitation regulations. Strong attention to detail and commitment to delivering dishes of the highest quality. Excellent communication and interpersonal skills, fostering effective collaboration and teamwork. Ability to thrive in a fast-paced and dynamic work environment. Food Handler’s Card Flexible Work Schedule including weekend availability. Reliable transportation. Ability to perform job functions with minimal supervision, attention to detail, and efficiency.
