Sushi Chef – Trapper's Sushi (Culebra Commons, San Antonio, TX)

Pay: $18.00 – $19.00 per hour (DOE) + Tips

Trapper's Sushi is looking for an experienced and passionate Sushi Chef to join our growing team at our Culebra Commons location in San Antonio, Texas

As one of the Pacific Northwest's most desired dining establishments, we pride ourselves on delivering fresh sushi, top-notch service, and a fun, welcoming experience. Our Sushi Chefs play a vital role in that mission by crafting high-quality rolls and dishes that keep guests coming back for more.

Position Overview

The Sushi Chef is responsible for preparing sushi rolls, nigiri, and specialty dishes while maintaining the highest standards of food quality, presentation, and sanitation. This position requires precision, creativity, and the ability to thrive in a fast-paced, guest-focused environment.

Duties and Responsibilities
  • Prepare sushi rolls, sashimi, nigiri, and other menu items according to company standards.
  • Ensure all ingredients are fresh, properly stored, and rotated according to FIFO (First In, First Out) practices.
  • Maintain a clean and organized workstation throughout service.
  • Follow all food safety and sanitation guidelines in compliance with local health codes.
  • Provide exceptional guest interaction at the sushi bar, offering menu suggestions and creating a memorable dining experience.
  • Collaborate with kitchen and front-of-house teams to ensure smooth service flow.
  • Assist with prep work, inventory, and restocking as needed.

Experience and Qualifications
  • 1–3 years of sushi preparation experience preferred.
  • Excellent knife skills and knowledge of sushi preparation techniques.
  • Strong attention to detail, time management, and consistency under pressure.
  • Positive attitude and strong communication skills with both guests and team members.
  • Texas Food Handler Card required prior to hire.
  • Ability to work evenings, weekends, and holidays as needed.
Physical Demands
  • Stand for extended periods in a busy kitchen or sushi bar environment.
  • Lift up to 30 pounds occasionally (ingredients, containers, etc.).
  • Use hands and arms for repetitive chopping, rolling, and plating motions.
