The Assistant Pastry Chef is accountable for overseeing the operations of the pastry kitchen, ensuring the exceptional preparation of all dessert offerings and the proper management of food items in line with established standards. This role involves collaborating on menu development and managing food procurement while adhering to budgetary constraints.
KEY RESPONSIBILITIES
- Maintain comprehensive knowledge of and adhere to all departmental policies and service standards.
- Ensure that operational standards are upheld at a high level consistently.
- Evaluate daily operations and assess the following:
- Guest occupancy
- Anticipated dining numbers for each venue
- Catering requirements
- Supply orders
- Scheduled meetings
- Special guests
- Ensure compliance with all hotel policies and procedures among staff.
- Set daily priorities and delegate production tasks to team members.
- Provide feedback on daily specials to the Pastry Chef and management.
- Review event sheets and note any alterations.
- Conduct meetings with the Pastry Chef to discuss schedules, assignments, and business forecasts.
- Communicate any changes in assignments throughout the shift.
- Identify issues that may affect departmental standards and assign corrective actions.
- Conduct physical inventory of designated food items daily.
- Place orders for daily produce, dairy, and specialty items.
- Ensure timely receipt and proper storage of supplies.
- Collaborate with Purchasing and Storeroom staff to ensure quality control of received products.
- Meet with the Stewarding Manager to discuss equipment needs and sanitation compliance.
- Ensure staff attendance and document any tardiness or absences.
- Coordinate staff breaks and monitor grooming standards.
- Verify that all opening tasks are completed to standard.
- Ensure that all kitchen areas are equipped with necessary tools and supplies.
- Maintain updated recipe cards, production schedules, and plating guides.
- Check operational equipment and ensure readiness for service.
- Supervise staff to ensure adherence to recipes and departmental standards.
- Monitor staff performance and ensure compliance with procedures.
- Address any deficiencies with appropriate personnel and assist as needed.
- Be proactive in managing inventory shortages and communicate with service staff regarding unavailable items.
- Observe guest feedback and collaborate with service staff to ensure satisfaction.
- Foster positive guest relations at all times.
- Stay informed about hotel services and local attractions to assist guests effectively.
- Conduct regular inspections of the pastry kitchen and direct staff to address any issues.
- Ensure cleanliness and quality standards are consistently met.
- Enforce state health regulations and hotel standards for food storage and safety.
- Develop new dessert items and assist in creating special menus for events.
- Review daily sales and food costs, addressing discrepancies as needed.
- Minimize waste and ensure efficient use of resources.
- Ensure that all closing procedures are completed before staff sign out.
- Promote a collaborative work environment to enhance productivity and morale.
- Oversee training for new hires and provide ongoing training for existing staff.
- Conduct performance evaluations and document relevant information.
- Maintain a friendly and professional demeanor when interacting with guests and colleagues.
- Perform additional duties as required.
Experience: A minimum of five years in a similar role within a high-end hotel or restaurant environment.
Education: High school diploma; culinary certification is preferred.
Skills: Attention to detail, organizational skills, ability to remain calm under pressure, teamwork, and minimal supervision are essential.
Technical Skills: Proficiency in managing production schedules, operating kitchen equipment, and adhering to safety standards.
Language: Proficiency in English is required; additional languages are a plus.
Physical Requirements: Ability to lift up to 30 pounds and perform various physical tasks throughout the workday.
Licenses & Certifications: California Food Handler Card is preferred.
