Job Summary

This individual will be responsible for overseeing kitchen operations, directing the preparation of meals in accordance with corporate programs and guidelines for an acute care hospital account overseeing patient food and retail cafe food for an account with $3 million in annual managed volume.

Key Responsibilities:
  • Menu Planning: Develop and implement regular and modified menus according to established guidelines, ensuring compliance with corporate standards and regulatory requirements.
  • Staff Training: Train kitchen staff in food preparation, safe handling, and operation of equipment, food safety and sanitation based on Company and regulatory standards.
  • Cleaning and Maintenance: Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas, ensuring a clean and safe environment for staff and patients.
  • Inventory Management: Maintain inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.
  • Regulatory Compliance: Comply with federal, state, and local health and sanitation regulations and department sanitation procedures.
  • Additional Duties: Perform other duties as assigned by management.
Qualifications:
  • Education: Associate's degree or equivalent experience.
  • Experience: Three to five years of progressive culinary/kitchen management experience.
  • Culinary Knowledge: Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Technical Skills: Experienced with computers; to include Microsoft Office (Word, Excel, and PowerPoint), Outlook, email, and the Internet.
  • Certifications: ServSafe certified (highly desirable).
  • Desirable Qualifications: Extensive catering experience, high-volume, complex foodservice operations experience.
