Position Overview
Reporting directly to the Director of UMass Catering, the Culinary Operations Manager plays a pivotal role in overseeing the culinary production segment of UMass Catering. This includes responsibilities for food preparation, menu and recipe innovation, staff scheduling, and the execution of culinary initiatives. The role also involves collaborating with the Director to establish an annual food budget for the Catering Department.
Key Responsibilities
- Engage in hands-on culinary production while providing training and oversight to chefs, head cooks, and kitchen staff across all production areas, from just-in-time cooking to display cooking and the preparation of cold dishes.
- Educate culinary personnel on cooking techniques, portion control, presentation, and effective merchandising strategies.
- Collaborate with the management team to enhance the merchandising of all food-related events.
- Develop specialized catering menus in partnership with the Director for unique events and new catering initiatives, including monthly specials and event-specific planning for university functions.
- Formulate recipes under the guidance of the Director of UMass Catering.
- Manage food costs within the production areas effectively.
- Participate in quality assurance programs, peer reviews, and ongoing education initiatives, while working with the Director on program enhancements and attending weekly production and sales meetings.
- Assist in recruiting and training new staff, providing mentorship and performance feedback to a team of 5-8 production personnel.
- Work alongside the Director to develop and adhere to the operational food budget, ensuring accountability within budgetary limits. Provide leadership in food production, assist in strategic planning, and help control food costs while maximizing revenue and net income for Catering Services.
- Conduct weekly staff meetings to ensure adequate staffing and scheduling, fostering a positive work environment.
- Implement Standard Operating Procedures (SOP) and enforce Hazard Analysis Critical Control Points (HACCP) principles, maintaining sanitary conditions in food storage and preparation areas.
- Communicate proactively with the Director regarding menu changes, oversee procurement and inventory management, and maintain accurate records for food ordering.
- Supervise all back-of-house operations, ensuring safety, sanitation, and quality control, while being present during events in both back and front of house settings.
- Collaborate with the management team to implement the FoodPro Menu Management and Inventory System, along with Catering Recipes.
- Demonstrate a commitment to affirmative action and non-discrimination principles, ensuring customer-focused quality services.
- Perform additional food and beverage-related duties as required.
Qualifications
- Bachelor's Degree in a relevant field or a certified culinary arts diploma from an accredited institution, along with over 3 years of experience in chef or hospitality management within high-volume, high-quality environments such as colleges, universities, hotels, or upscale catering services.
- Sanitation Certification is mandatory.
Preferred Qualifications
- Certification from a recognized culinary program, such as the American Culinary Federation (ACF), is advantageous.
- Experience with computerized menu management systems is preferred.
Physical Requirements
- Ability to stand and walk for extended periods and lift weights as necessary.
Work Schedule
- Schedule varies based on departmental needs, potentially requiring evening and weekend hours.
- Position is year-round.
