Full-Time Salary Position starting at $60K DOE plus benefits. Located in Albuquerque, NM, at our Hotel Chaco.

Position Overview: The Culinary Operations Manager will craft signature dishes under the guidance of the Executive Chef, ensuring that meals are delivered simultaneously and meet high standards of quality and timeliness. This role will also involve stepping in for the Executive Chef to oversee food preparation and culinary operations while fulfilling management duties. The Culinary Operations Manager plays a crucial role in collaborating with the Front of House team to create memorable dining experiences for guests.

Supervisory Responsibilities: Oversee Line Cooks, Prep Cooks, and Dishwashers.

Key Responsibilities:

  • Assist the Executive Chef in daily operations.
  • Maintain open communication with kitchen leadership regarding assignments and timelines.
  • Foster a positive and professional atmosphere among coworkers and guests.
  • Support the Executive Chef in planning and directing culinary activities, including estimating food needs and managing food/labor costs.
  • Execute management responsibilities in line with company policies and legal requirements, including recruitment, training, work assignments, performance evaluations, and conflict resolution.
  • Contribute to menu design and preparation.
  • Deliver high-quality dishes in both presentation and flavor.
  • Be prepared to work a station during service when the Executive Chef is managing the kitchen.
  • Ensure efficient kitchen operations.
  • Proactively address and resolve any issues that arise.
  • Adhere to company standards for food safety, handling, cleanliness, and sanitation to protect the health and safety of guests and staff.
  • Manage inventory by ordering supplies as needed.
  • Guarantee that food is prepared and served simultaneously, maintaining Heritage quality standards.
  • Perform additional duties as assigned that align with the responsibilities of this position.

Qualifications:

  • High school diploma or equivalent experience/training; a four-year degree in Hospitality is preferred, or a comparable combination of education and experience.
  • 2-3 years of kitchen management experience or a similar combination of education and experience; experience in luxury hospitality is preferred.
  • Certification in New Mexico Food Handling and ServSafe Manager Certification.
  • Ability to work on your feet in a humid kitchen environment for extended periods.
  • Must be capable of lifting, pushing, reaching for, and carrying over 30 pounds frequently.
  • Strong verbal communication skills and the ability to multitask effectively.
