WORK ENVIRONMENT:

Bar outlets, banquet facilities, and service areas.

Internal: Team members in Bar, Kitchen/Stewarding, Restaurant, Storeroom/Purchasing, Housekeeping, and Engineering.

ESSENTIAL JOB FUNCTIONS

1. Uphold comprehensive knowledge of and adhere to all departmental policies, service protocols, and standards.

2. Maintain thorough understanding of proper equipment maintenance and usage. Utilize equipment solely as intended.

3. Anticipate guest needs, respond promptly, and acknowledge all guests, regardless of busyness or time of day.

4. Foster positive guest relations consistently.

5. Be knowledgeable about all hotel services/features and local attractions/activities to accurately respond to guest inquiries.

6. Address guest complaints, ensuring satisfaction.

7. Oversee cleanliness, sanitation, and organization of assigned work areas.

8. Maintain comprehensive knowledge of all menu items, liquor brands, beers, wines, and non-alcoholic selections available.

9. Understand the specific characteristics and descriptions of every wine/champagne by the glass and major wines on the wine list.

10. Comply with state liquor regulations, particularly those prohibiting service to minors, intoxicated individuals, and drunk driving.

11. Be familiar with table/seat/station numbers, room capacity, hours of operation, and menus.

12. Complete opening side duties:
  • Verify quality and quantity of all bar stock and supplies using consumption reports.
  • Fill out opening inventory sheets.
  • Request all necessary supplies.
  • Transport supplies from storeroom to designated bars.
  • Stock ice in the bar.
  • Organize glassware and paper supplies.
  • Prepare glassware and paper supplies for service.
  • Arrange bottles in display cabinets and speed rails.
  • Check temperatures of refrigeration units and glass wash machines.
  • Prepare bowls of bar snacks; place on bar and tables at opening.
13. Inspect cleanliness and condition of bar and service areas; address any deficiencies.

14. Assist bartenders in preparing garnishes and mixes.

15. Replenish supplies in bars throughout the shift.

16. Restock ice as needed.

17. Answer phones following Peabody Service Excellence practices.

18. Ensure cleanliness, sanitation, and organization of bar and service areas.

19. Transport soiled wares to the dishwashing area.

20. Extend courteous farewells to guests as they leave and invite them to return.

21. Clean and sanitize glassware using the glass machine.

22. Maximize usage of all supplies to achieve budgeted beverage costs and minimize waste.

23. Utilize all chemicals in accordance with OSHA regulations and hotel standards.

24. Complete closing side duties:
  • Properly store all reusable goods.
  • Empty and drain ice bins.
  • Scrub sinks.
  • Remove all items from bar tops and tables; place clean items in designated areas; wipe clean all surfaces of bar tops and tables.
  • Remove liquor and bottles from speed rails and liquor cabinets.
  • Secure all liquors, beers, wines, coolers, cabinets, and storage areas.
  • Wipe down all bottles and surfaces.
  • Clean all bar equipment and tools.
  • Dispose of trash.
  • Sweep and mop floors behind the bar, in the office, and in the service bar.
25. Obtain certification of TIPS Training within 60 days of employment.

SECONDARY JOB FUNCTIONS

1. Assist with weekly/monthly inventories.

2. Follow maintenance programs and cleaning schedules.

3. Document maintenance needs on work orders and submit to the manager.

QUALIFICATIONS

Essential:

1. Minimum age of 18 to handle liquor.

2. Food handling certificate.

3. Proficiency in English, both verbal and written.

6. Ability to suggestively sell.

7. Proficiency in inputting and accessing information in property management systems/computers/point of sales systems.

8. Previous guest relations training.

9. Certification in CPR.

PHYSICAL ABILITIES

Essential:

1. Ability to exert physical effort in transporting up to 300 pounds.

2. Endure various physical movements throughout the work areas.

3. Reach arm's length above shoulder height.

4. Remain in a stationary position for 30-45 minutes during the work shift.
