Job Summary

We are seeking an experienced Executive Japanese Culinary Specialist to join our team at Corporate Management Group. In this role, you will be responsible for preparing high-quality sushi dishes in accordance with food health and safety regulations and restaurant standards.

About the Job

The ideal candidate will have a passion for food and a strong background in contemporary cooking techniques such as foams, ISSI, sous vide, combination oven, curing, and hydrocolloids. You will be working in a fast-paced environment and must be able to work well under pressure while maintaining restaurant standards during busy periods.

Key Responsibilities:
  • Prepare traditional Japanese sushi rice and various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Cut, slice, and fillet different types of fish expertly and inspect the quality of fruits, vegetables, and fish used in sushi preparation.
  • Maintain a clean work environment to prevent food contamination and regularly take inventory of food supplies and other products.
  • Sterilize all utensils, instruments, and equipment used in sushi preparation before every use and communicate effectively with wait staff to ensure special requests and food allergy considerations are met.
Requirements

To be successful in this role, you should have a high school diploma or GED and an associate's degree in culinary arts or American Culinary Federation (ACF) certification is preferred. Proven experience working in upscale sushi restaurants is essential, along with a valid food handler's license and sound knowledge of food safety regulations. The ability to work under pressure and stand for long periods of time is also required.

This position offers a competitive salary range of $45,000 - $60,000 per year, depending on experience. Additionally, you will have access to benefits including health insurance, paid time off, and opportunities for professional growth and development.
