Job Overview

A high-end sushi restaurant seeks an experienced Executive Sushi Culinary Director to lead its kitchen team and drive culinary excellence. This is a unique opportunity for a skilled Sushi Chef to oversee the preparation of various sushi rolls and Japanese dishes, ensuring exceptional quality and presentation.

Critical Responsibilities:

  • Lead and train the Sushi Line staff in sushi preparation techniques, including cutting, rolling, and plating.
  • Maintain a thorough knowledge of sushi preparation methods, fish types, and seafood used in sushi dishes.
  • Collaborate with the kitchen team to ensure efficient food preparation and presentation.

Requirements and Qualifications:

  • Minimum 10 years of experience as a Sushi Chef or similar role in a high-end restaurant setting.
  • Proven track record of developing innovative sushi recipes and flavor combinations.
  • Familiarity with different types of fish and seafood used in sushi dishes.
  • Strong understanding of food safety regulations and best practices in handling raw fish.
  • Ability to work in a fast-paced environment while maintaining attention to detail and quality.

Compensation: $175,000 per year, commensurate with experience.
