Position Overview

As a Culinary Preparation Specialist, you will be responsible for cooking and preparing a diverse range of food items, including meats, seafood, poultry, vegetables, sauces, stocks, and baked goods, utilizing various kitchen equipment and utensils in accordance with the Daily Prep List.

Key Responsibilities

Essential Duties
  • Embrace and embody the mission of Smithfield Station, ensuring a delightful dining experience for our guests through exceptional service and quality products.
  • Consult the Daily Prep List at the beginning of each shift to identify assigned tasks, prioritizing items that need immediate attention.
  • Adhere to established portion sizes, cooking techniques, quality benchmarks, and kitchen policies.
  • Maintain a clean and sanitized work area, including all kitchen surfaces and equipment.
  • Store food items properly to avoid spoilage and ensure freshness.
  • Prepare various dishes according to customer requests or supervisor directives, following approved cooking methods.
  • Monitor and document the temperature of food items and storage areas to ensure safety and compliance.
  • Wash, peel, and chop ingredients as needed for meal preparation.
  • Measure and portion ingredients accurately, ensuring compliance with recipe specifications.
  • Dispose of waste and maintain cleanliness in kitchen waste receptacles.
  • Assist fellow cooks and kitchen staff with various tasks as required, providing support to ensure smooth operations.
  • Transport food supplies and kitchen tools between storage and preparation areas.
  • Utilize manual and electric kitchen appliances for food preparation tasks.
  • Promptly report any equipment malfunctions and notify supervisors of low food supplies.
  • Follow standard recipes for all food preparations, ensuring consistency and quality.
  • Complete opening and closing checklists and assist in the overall kitchen operations.
  • Participate in scheduled employee meetings and contribute suggestions for operational improvements.
  • Collaborate with team members to meet guest needs and support restaurant efficiency.
  • Provide coverage for colleagues as necessary to maintain service standards.
Additional Responsibilities
  • Maintain records of food usage and inventory.
  • Prepare meat, poultry, and seafood by cutting, slicing, or grinding as required.
  • Restock refrigerators and manage buffet setups.
Tools & Equipment
  • Commercial kitchen tools: blenders, choppers, grinders, processors, and slicers.
  • Cooking appliances: broilers, deep fryers, grills, ovens, and steamers.
  • Essential kitchen tools: cutlery, food warmers, measuring cups, mixers, and scales.
Qualifications

  • Reliable transportation to and from the workplace.
  • Availability to work shifts during weekends and holidays.
  • Minimum of one year of experience in kitchen preparation and cooking.
  • At least six months of experience in a similar role.
  • Effective communication skills with management and peers.
  • Able to reach, bend, stoop, and lift up to 40 pounds regularly.
  • Capability to stand for extended periods, up to five hours.
