About the Role

The Hongkong and Shanghai Hotels LTD is seeking a highly skilled and organized Sous Chef to join our culinary team at The Peninsula Chicago. As a key member of our kitchen operations, you will be responsible for assisting the Shanghai Terrace Chef De Cuisine in planning, directing, and controlling the day-to-day preparation and production of the Shanghai Terrace Kitchen.

Key Responsibilities
  • Assist in planning and executing menu development, inventory management, and kitchen operations to ensure seamless service delivery.
  • Collaborate with the Executive Sous Chef to develop and implement kitchen standards, policies, and procedures.
  • Ensure the production of high-quality dishes, maintaining consistency and presentation standards.
  • Manage kitchen inventory, minimizing waste and maximizing raw material usage.
  • Develop and maintain relationships with suppliers, vendors, and other stakeholders to ensure seamless operations.
  • Participate in menu planning, recipe development, and food costing to ensure profitability and customer satisfaction.
Requirements
  • Minimum of 3 years of experience as a Sous Chef in an upscale Chinese restaurant.
  • Excellent organizational, communication, and leadership skills.
  • Strong attention to detail and ability to work in a fast-paced environment.
  • Ability to manage and motivate a team of culinary professionals.
  • Knowledge of food safety and sanitation practices.
