Key Responsibilities:- Develop and implement comprehensive training programs for culinary team members, ensuring they meet the highest standards of quality and service.
- Collaborate with account chefs to create new menus that align with Bon Appetit's standards and exceed guest expectations.
- Optimize production efficiency by analyzing ingredient listings, recipe notes, weight, and volume selections.
- Input data and monitor usage of culinary systems, including Menu Management and Allergen Software.
- Review recipes for nutritional and culinary accuracy, ensuring compliance with Bon Appetit's wellness principles.
- Work closely with the onsite Registered Dietitian team to enhance menu transparency and promote healthy dining options.
- Ensure compliance with federal, state, and local health and sanitation regulations, as well as department sanitation procedures.
- Participate in departmental meetings, staff development, and professional programs to stay up-to-date on industry trends and best practices.
- Prepare reports to demonstrate compliance with Café Manager standards.
- Culinary degree or equivalent four-year culinary development experience.
- At least 7 years of relevant culinary experience, including 3 years of culinary management experience.
- ServSafe certification.
- Working knowledge of basic kitchen operations and food safety standards.
- Excellent verbal and written communication skills.
- P&L accountability and contract-managed service experience is desirable.
