SUMMARY
The Culinary Sanitation Specialist is tasked with ensuring the pristine condition of kitchen environments and all associated dishware, tableware, and service items, under the supervision of the Culinary Sanitation Supervisor.
SPECIFIC DUTIES AND RESPONSIBILITIES
The characteristics of the work environment described here represent those encountered by a team member while performing the essential functions of this role, with or without reasonable accommodations. • Maintains cleanliness standards for the following items and areas:
o Broilers
o Deep fryers
o Grills
o Ovens
o Range hoods
o Dishwashing machines
o Floors
o Walk-in coolers
• Diligently rinses all dishware, tableware, and service items after they have been processed through the dish machine.
• Adheres to Health & Safety standards as mandated by relevant governmental agencies.
• Washes hands at every potential point of contamination.
• Cleans kitchen floors using deck brushes and mops.
• Follows proper procedures for the three-compartment sink.
• Conducts weekly de-liming of each dishwashing machine.
• Utilizes all cleaning chemicals according to established guidelines and is familiar with the location of safety data sheets.
• Reports any malfunctions of dishwashing equipment, including temperature irregularities or other operational issues.
• Sets up, breaks down, and maintains all dishwashing units.
• Empties all waste receptacles and cardboard boxes into designated disposal areas.
• Cleans and maintains all cooking lines.
• Performs additional tasks as assigned by supervisors to ensure kitchen maintenance, including but not limited to:
o Cleaning ice machines
o Cleaning hand sinks
o Restocking paper towel and soap dispensers
• Ensures the organization, cleanliness, and proper inventory of safety signage.
• Other duties as assigned.
STANDARDS OF PERFORMANCE
• Ability to manage multiple tasks simultaneously.
• Strong communication skills for safety protocols.
• Provides excellent internal customer service to team members.
• Availability to work as needed, including weekends, holidays, and evenings.
EDUCATION, TRAINING, AND EXPERIENCE
• High school diploma or equivalent preferred.
• Experience in Customer Service or Food & Beverage is preferred.
LANGUAGE ABILITY
Ability to read and interpret documents such as safety regulations, operating instructions, and procedural manuals.
REASONING ABILITY
Ability to interpret a variety of instructions provided in written, oral, diagrammatic, or schedule form.
CERTIFICATES AND LICENSES
Must be able to obtain and maintain appropriate and applicable licensing.
WORK ENVIRONMENT
