As a Senior Banquet Culinary Specialist, you will be responsible for crafting exquisite plate and platter presentations for various events. Your role includes setting up and managing action stations for banquets or buffets, and carving meats as per guest requests.
Key Responsibilities:
- Ensure sufficient stock of all necessary items to support banquet and buffet operations.
- Skillfully operate ovens, stoves, grills, microwaves, and fryers to prepare a variety of dishes.
- Prepare ingredients for cooking, which includes portioning, chopping, and proper storage of food items.
- Clean and peel fresh fruits and vegetables, weigh, measure, and mix ingredients accurately.
- Follow recipes and quality standards to prepare and cook food, ensuring adherence to presentation standards and food preparation checklists.
- Prepare cold dishes and test food for proper cooking.
- Monitor food quality throughout the preparation process.
- Set up and dismantle workstations efficiently.
- Serve food in appropriate portions using suitable receptacles.
- Maintain cleanliness by washing and disinfecting kitchen areas, tables, tools, knives, and equipment.
Safety and Professional Standards:
- Adhere to all company policies regarding safety and security; report maintenance needs, accidents, and unsafe conditions to management.
- Complete all required safety training and certifications.
- Maintain a clean and professional appearance in accordance with company standards.
- Anticipate and address the service needs of guests with professionalism.
