Job Summary

Loews Ventana Canyon Resort is seeking a highly skilled Sous Chef to join our culinary team. As a key member of our kitchen staff, you will be responsible for maintaining the highest standards of food quality, safety, and presentation.

Key Responsibilities
  • Manage kitchen staffing levels to ensure optimal performance and efficiency
  • Implement and enforce departmental guidelines, policies, and procedures
  • Oversee the smooth operation of food production activities, including labor management, inventory control, and sanitation requirements
  • Supervise and assist food handlers in the preparation and production of all hot and cold food items
  • Order and receive raw food ingredients, ensuring proper storage and handling
  • Monitor food preparation, production, holding, and storage operations to ensure adherence to government food service sanitation standards
  • Perform regular equipment inspections and report maintenance needs to the engineering department
  • Lead and develop a high-performing team, providing coaching, counseling, and training to ensure Loews Hotels standards are met
  • Review daily payroll reports and control labor costs by adjusting staffing levels as needed
  • Attend hotel meetings and maintain open communication with other departments to stay informed about in-house activities and promotions
Requirements
  • ACF certification as Sous Chef or culinary degree from a recognized institution, with equivalent experience
  • Three to five years of experience in quantity food production, preferably in an upscale hotel or freestanding restaurant
  • One plus years of supervisory experience in quantity food production, preferably in an upscale hotel or freestanding restaurant
  • Excellent culinary skills and knowledge of food production techniques
  • Thorough understanding of kitchen equipment use and operation
  • Ability to lift 35 pounds, bend, stoop, stand, and push carts weighing up to 200 pounds
  • Outstanding leadership, management, organizational, and communication skills
  • Ability to speak, read, and write English
  • Flexibility to work weekends and holidays
